Bignè alla Crema (Italian Cream Puffs with Vanilla Pastry Cream)

In Italian pastry shops, bignè alla crema are the classic cream-filled choux buns: light, hollow shells with a crisp golden exterior and a generous centre of smooth vanilla pastry cream. The pleasure of the dish comes from precision rather than decoration — well-dried choux pastry that holds its shape, custard chilled until thick and glossy, and a simple dusting of icing sugar to finish. They are best filled close to serving so the buns keep their delicate bite, making them ideal for an elegant dessert tray, afternoon coffee or a celebratory spread without heavy embellishment.

Why this recipe works

  • Classic choux method: Cooking the flour paste before baking helps the shells rise into light, hollow buns ready for filling.
  • Crisp pastry shells: A hot start in the oven gives lift, while the lower finishing temperature and brief drying time help set the shells.
  • Smooth vanilla filling: Cornflour stabilises the pastry cream so it chills into a thick, pipeable custard without becoming heavy.
  • Easy to stage: The pastry cream can be chilled in advance and the shells kept unfilled, then assembled shortly before serving.

Timing notes

  • Chill the pastry cream fully: Make the custard first so it has time to set and become thick enough for piping.
  • Cool the shells completely: Residual heat can loosen the pastry cream, so fill only once the choux buns are fully cool.
  • Fill close to serving: The filled buns are best when freshly assembled, before the crisp shells soften in the fridge.

Common mistakes

  • Heating the custard too aggressively: Temper the hot milk into the eggs slowly, then whisk constantly over moderate heat to keep the pastry cream smooth.
  • Stopping before the choux is ready: The paste should be glossy and fall from the spoon in a thick V shape before it is piped.
  • Removing pale shells too early: Choux needs to bake until deep golden and crisp; under-baked shells are more likely to collapse or turn soft.

Ingredient notes

  • Have the flour ready: Measure the flour before starting the choux so it can be added all at once when the milk and butter boil.
  • Let the vanilla lead: Vanilla is the main flavour in the filling, so a good extract or vanilla bean paste gives a more rounded custard.
  • Why cornflour helps: Cornflour gives the pastry cream a stable, smooth thickness that holds well inside the buns.

Instructions

  1. Make the pastry cream first so it can chill. In a saucepan, warm the milk with the vanilla until steaming but not boiling.
  2. In a bowl, whisk the eggs with the caster sugar, cornflour and a pinch of salt until smooth. Slowly whisk in the hot milk, then pour everything back into the saucepan.
  3. Cook over medium heat, whisking constantly, for 3 to 5 minutes until thick and bubbling. Take off the heat and whisk in the butter until glossy.
  4. Tip the pastry cream into a clean bowl and press a piece of baking paper directly onto the surface to prevent a skin forming. Chill until cold and set.
  5. Heat the oven to 200°C (390°F) and set a baking tray in the middle of the oven to preheat. Measure out the flour for the choux so it is ready to add in one go.
  6. In a saucepan, bring the milk, butter, salt and caster sugar to a full boil. Remove from the heat, add the flour all at once, then beat hard with a wooden spoon until a smooth paste forms.
  7. Return the pan to medium heat and cook the paste for 1 to 2 minutes, stirring, until it forms a ball and leaves a thin film on the base of the pan. Tip into a mixing bowl and leave to cool for 5 minutes so it does not scramble the eggs.
  8. Beat in the eggs one at a time until the paste is smooth, glossy and drops from the spoon in a thick V shape. Spoon into a piping bag and pipe 12 even mounds onto the hot baking tray, spacing them well apart.
  9. Bake for 20 minutes, then reduce the oven to 180°C (355°F) and bake for 10 to 15 minutes more until deep golden, crisp and well risen. Turn off the oven, crack the door open, and leave the buns inside for 5 minutes to dry out.
  10. Cool the buns completely on a rack. Whisk the chilled pastry cream until smooth, pipe it into the buns, then dust generously with icing sugar to serve.

Recipe notes

Tips

  • For the crispest shells, make sure the buns are a deep golden colour before you take them out, and let them dry briefly in the switched-off oven with the door ajar.
  • If the pastry cream looks lumpy after chilling, whisk it until smooth before piping; it should be thick but spreadable.
  • Food safety: the pastry cream contains eggs, so keep it chilled and avoid serving to anyone who should not eat undercooked or lightly cooked eggs.

Substitutions

  • Replace vanilla extract with vanilla bean paste for a more intense vanilla flavour.
  • Replace cornflour with potato starch for a similarly smooth, stable pastry cream.

Storage

  • Refrigerate up to 2 days
  • Store filled buns in an airtight container in the fridge and eat within 2 days; the shells will soften over time. For best texture, store unfilled buns at room temperature for 1 day and keep the pastry cream chilled, then fill just before serving.
