Bignè al Cioccolato (Italian Chocolate Cream Puffs)
Why this recipe works
- Crisp shell, creamy centre: The choux buns are baked until dry and hollow, giving a light pastry shell that contrasts with the rich chocolate filling.
- Classic choux method: Cooking the flour paste before adding the eggs helps the dough hold enough structure to rise properly in the oven.
- Rich but balanced: Dark baking chocolate keeps the pastry cream deep and smooth without making the finished bignè overly sweet.

Timing notes
- Cool before filling: Let both the choux buns and pastry cream cool properly before piping; warm filling will soften the shells too quickly.
- Best served fresh: Filled bignè are at their crispest on the day they are made. They can be chilled, but the shells will gradually soften.
Texture tips
- Dry the shells well: Leaving the baked buns in the switched-off oven with the door slightly open helps excess steam escape and keeps the pastry crisp.
- Fill close to serving: For the cleanest texture contrast, pipe in the chocolate cream shortly before serving rather than hours in advance.
- Keep the cream glossy: Whisk the pastry cream constantly as it thickens, then add the chocolate and butter off the heat for a smooth finish.
Common mistakes
- Opening the oven too early: Avoid opening the oven during the early bake, when steam is helping the choux rise and set.
- Adding eggs too quickly: Beat in the eggs one at a time and stop when the dough is glossy and falls in a thick V shape; the texture matters more than rushing.
- Pale shells collapse more easily: Bake until the buns are deep golden and crisp, not just puffed, so they hold their shape after cooling.
Make-ahead tips
- Prepare components separately: The pastry cream can be chilled and the unfilled choux kept separate until you are ready to assemble.
- Freeze unfilled shells: Unfilled buns freeze better than filled ones. Defrost at room temperature, then refresh briefly in a 180°C (355°F) oven before filling.
- Keep filled bignè chilled: Because the filling contains eggs and dairy, store filled buns in the fridge and serve promptly.

Instructions
- Heat the oven to 200°C (390°F) and line a baking tray. In a saucepan, warm the milk, butter and sugar over medium heat until the butter melts and the mixture just comes to a simmer. Take off the heat.
- Add the flour all at once and beat vigorously with a wooden spoon until a smooth paste forms. Return to medium heat and cook, stirring constantly, for 1 to 2 minutes until a thin film forms on the base of the pan and the dough pulls away from the sides. Tip into a mixing bowl and leave for 5 minutes to cool slightly.
- Beat in the eggs one at a time until the dough is glossy and falls from the spoon in a thick V shape. Spoon into a piping bag and pipe 12 mounds onto the tray, leaving space for spreading. Bake for 20 to 25 minutes until well risen, deep golden and crisp.
- Turn the oven off, crack the door open slightly, and leave the buns inside for 5 minutes to dry out. Transfer to a rack and cool completely before filling. If needed, pierce the side of each bun with the piping tip to make a neat opening.
- For the pastry cream, warm the milk in a saucepan until steaming but not boiling. In a bowl, whisk together the sugar, cornflour and eggs until smooth. Slowly whisk in the hot milk, then return everything to the pan.
- Cook over medium heat, whisking constantly, for 3 to 5 minutes until very thick and bubbling. Take off the heat and whisk in the chocolate, butter and vanilla until smooth and glossy. Leave to cool until just warm and thick enough to pipe.
- Spoon the chocolate pastry cream into a piping bag and fill each bun until it feels heavy. Dust generously with icing sugar just before serving. Serve the same day for the best crispness.
Recipe notes
Tips
- For the crispest shells, do not open the oven during the first 18 minutes of baking, as the steam is what helps the choux rise.
- If the pastry cream is still warm when you fill the buns, it can soften them; let it cool until thick and pipeable.
- Food safety: this recipe contains eggs; serve promptly and keep filled buns chilled, and avoid serving to vulnerable groups unless using pasteurised eggs.
Substitutions
- Replace vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace dark baking chocolate with milk baking chocolate for a sweeter, milder filling.
Storage
- Refrigerate up to 2 days
- Store filled buns in an airtight container in the fridge for up to 2 days, though the shells will soften. For best results, freeze unfilled buns, then defrost at room temperature and crisp in a 180°C (355°F) oven for 5 to 7 minutes before filling; keep the pastry cream chilled and use within 2 days.
