Moroccan Shakshuka with Harissa (Modern)
Why this recipe works
- Spiced tomato base: Onion, red pepper, garlic, cumin, paprika and harissa build a savoury sauce with gentle heat before the eggs are added.
- Bright but hearty: Ripe tomatoes give the sauce tang and body, while fresh coriander adds lift at the end.
- Simple pan cooking: The sauce and eggs cook in the same frying pan, with visual cues for when the sauce is thickened and the egg whites are set.

Adjust the heat
- For a milder shakshuka: Use less harissa and keep the sweet paprika, which adds warmth without extra heat.
- For more heat: Use hot paprika in place of sweet paprika, or add a little extra harissa to the sauce before simmering.
Texture tips
- Keep the eggs tender: Lower the heat once the eggs go in and cover the pan gently; a hard boil can toughen the whites before the yolks are ready.
- Thicken the sauce first: Let the tomato and pepper mixture reduce until spoonable before adding the eggs, so they sit neatly in the sauce rather than sinking.
Make-ahead tips
- Make the sauce in advance: Cook and chill the tomato-pepper sauce, then reheat it until piping hot and poach fresh eggs just before serving.
- Reheat gently: Warm the sauce in a frying pan over moderate heat, stirring occasionally, before making the wells for the eggs.
Serving ideas
- Serve with warm bread: Pita is ideal for scooping up the sauce and soft eggs, though naan also works well for a softer, chewier option.
- Finish with herbs: Fresh coriander adds colour and a clean, herbal contrast to the spiced tomato sauce.

Ingredients
Instructions
- Set a large frying pan over medium heat and warm the olive oil. Thinly slice the onion, slice the red pepper, and finely chop the garlic.
- Add the onion and red pepper to the pan with a pinch of salt and cook for 8 to 10 minutes, stirring, until softened and lightly coloured. Stir in the garlic, cumin and sweet paprika and cook for 1 minute until fragrant.
- Stir in the harissa, then add the tomatoes, roughly chopping them as you go. Bring to a gentle simmer and cook for 10 to 12 minutes, stirring occasionally, until the sauce thickens and the tomatoes break down.
- Use the back of a spoon to make 4 small wells in the sauce. Crack an egg into each well, cover, and cook on low for 6 to 8 minutes until the whites are set and the yolks are still soft, or longer if you prefer them firmer.
- Meanwhile, warm the pita bread in a dry pan or briefly in the oven until soft and hot. Roughly chop the fresh coriander and scatter it over the shakshuka, then serve straight from the pan with the warm pita for scooping.
Recipe notes
Serving suggestions
This recipe pairs well with:
Tips
- Keep the sauce at a gentle simmer before adding the eggs; if it is boiling hard, the whites can turn tough before the yolks warm through.
- For neat eggs, crack each one into a small bowl first, then slide it into a well in the sauce.
- Eggs should be cooked until the whites are fully set; if you are pregnant, elderly, or immunocompromised, cook the yolks until firm.
Substitutions
- Replace Harissa with 1 tsp smoked paprika plus 0.5 tsp cayenne pepper for a similar smoky heat.
- Replace Sweet paprika with hot paprika for a spicier finish.
- Replace Pita bread with naan bread for a softer, chewier scoop.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in an airtight container. Reheat the sauce gently in a frying pan until piping hot, then crack in fresh eggs and poach to your liking for the best texture.
