Moroccan Quick Tagine Bowl
Why this recipe works
- Warm spice base: Briefly cooking the cumin and cinnamon in oil helps release their aroma before the tomatoes and stock go in.
- Sweet-savoury balance: Dried apricots soften into the tomato sauce, adding gentle sweetness without making the stew taste sugary.
- Fast but substantial: Canned chickpeas and quick couscous keep the cooking time short while still making the bowl filling.

Ingredient swaps
- Make it gluten-free: Serve the chickpea tagine over quinoa instead of couscous.
- Swap the herbs: Use flat-leaf parsley instead of coriander for a milder, less citrusy finish.
Make-ahead tips
- Cook the stew ahead: The chickpea tagine can be made in advance and refrigerated in a sealed container for up to 3 days.
- Freeze the tagine only: Freeze the chickpea mixture without the couscous, then defrost overnight in the fridge before reheating.
- Loosen when reheating: Reheat gently in a saucepan with a splash of vegetable stock if the sauce has thickened.
Common mistakes
- Do not scorch the spices: Stir the cumin and cinnamon constantly and add the tomatoes once they smell fragrant.
- Keep the simmer gentle: A steady, gentle simmer thickens the sauce without making it catch on the base of the pan.
- Rinse the chickpeas well: Draining and rinsing removes excess canning liquid, giving the sauce a cleaner texture.

Ingredients
Instructions
- Peel and finely chop the onion. Heat the olive oil in a large frying pan over a medium heat, then cook the onion for 6 to 8 minutes until softened and lightly golden.
- Crush in the garlic and cook for 30 seconds until fragrant. Stir in the cumin and cinnamon and cook for 30 seconds, stirring constantly so the spices do not catch.
- Add the chopped tomatoes and vegetable stock, then bring to a gentle simmer. Tip in the chickpeas (drained and rinsed) and the apricots, then season with the salt and pepper.
- Simmer for 12 to 15 minutes, stirring occasionally, until the sauce is slightly thickened and the apricots are plump. Taste and adjust seasoning if needed.
- Meanwhile, put the couscous in a saucepan and pour over 200 ml boiling water from the kettle. Cover and leave for 5 minutes, then fluff with a fork.
- Roughly chop the coriander and stir most of it through the chickpea stew off the heat. Spoon the couscous into bowls, top with the tagine-style chickpeas, and finish with the remaining coriander.
Recipe notes
Tips
- Keep the simmer gentle so the sauce reduces without sticking; if it thickens too quickly, loosen with a splash of vegetable stock.
- For the best texture, drain and rinse the chickpeas well to remove excess canning liquid before adding them to the pan.
Substitutions
- Replace Couscous with Quinoa for a gluten-free bowl.
- Replace Fresh coriander with Fresh flat-leaf parsley for a milder, less citrusy finish.
Storage
- Refrigerate up to 3 days
- Cool the chickpea tagine completely, then refrigerate in a sealed container for up to 3 days. Freeze the chickpea tagine (not the couscous) for up to 2 months; defrost overnight in the fridge and reheat in a saucepan with a splash of vegetable stock until piping hot.
