Steckrübeneintopf (German Swede and Potato Stew)
Why this recipe works
- A savoury base: Rendering the bacon first seasons the pot with smoky fat before the onion and vegetables are added.
- Hearty but simple: Swede and potatoes soften into a satisfying, spoonable stew without needing cream or a heavy sauce.
- Forgiving method: The vegetables cook gently in stock, so the recipe is easy to manage and simple to adjust before serving.

Ingredient notes
- Choose firm swede: Look for swede that feels heavy for its size, with firm flesh and no soft patches.
- Dried marjoram suits the stew: Dried marjoram holds up well during simmering and gives the broth a classic savoury herb note.
- Potato choice matters: New potatoes keep more shape, while a flourier potato will break down more and thicken the broth.
Texture tips
- For a thicker bowl: Lightly mash some of the cooked swede and potato against the side of the pot, then stir them back into the broth.
- Keep the simmer gentle: A low simmer helps the vegetables turn tender without breaking apart too quickly.
Make-ahead tips
- Good for batch cooking: The stew keeps well in the fridge and is easy to portion for simple meals over a few days.
- Freezes well: Cool completely before freezing, then defrost in the fridge before reheating.
- Loosen if needed: Add a splash of stock when reheating if the potatoes have thickened the stew.
Authenticity notes
- A home-style Eintopf: This is the kind of practical German stew built around root vegetables, stock and a small amount of smoky meat for depth.
- Smoked meat variations: Bacon is a common way to add savoury flavour, though other smoked meats are often used in similar German stews.

Ingredients
Instructions
- Cut the bacon into small pieces. Peel and dice the onion, then peel the carrots and swede and cut them into bite-size chunks. Scrub the potatoes and cut them into chunks similar in size to the swede.
- Put the bacon in a large pot over medium heat and cook for 6 to 8 minutes, stirring, until the fat renders and the bacon starts to colour. Add the onion and cook for 4 to 5 minutes until softened.
- Stir in the carrots, swede and potatoes, then pour in the vegetable stock. Add the bay leaves, dried marjoram, fine sea salt and black pepper.
- Bring to a gentle simmer, then reduce the heat to low and cook for 30 to 35 minutes, stirring occasionally, until the vegetables are very tender. Taste and adjust with a little more fine sea salt and black pepper if needed.
- Remove the bay leaves and ladle into bowls. For a thicker, more traditional texture, lightly mash a few pieces of swede and potato against the side of the pot before serving.
Recipe notes
Tips
- Keep the vegetable pieces a similar size so the swede and potatoes finish cooking at the same time.
- Maintain a gentle simmer rather than a rapid boil to keep the vegetables intact and the broth clear.
- If serving vulnerable groups, make sure the stew is reheated until piping hot throughout.
Substitutions
- Replace new potatoes with red potato for a slightly firmer texture.
- Replace dried marjoram with dried thyme for a different but still traditional herb note.
- Replace bacon with smoked turkey for a lighter, less fatty base.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob until piping hot, adding a splash of vegetable stock if it has thickened. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
