Carrot and Chickpea Tagine with Couscous and Harissa

A tagine brings together tender vegetables, pulses and aromatic spices in a gently simmered sauce, traditionally served with something to soak up the juices. Here, carrots and chickpeas give the dish substance, while tomato passata, cumin and cinnamon create a warm, savoury base with gentle sweetness from the carrots. Couscous keeps it quick and practical for dinner, and the finishing touches matter: toasted almonds add crispness, coriander brings freshness, and harissa on the side lets each person control the heat. It is a satisfying vegan main with enough depth for a relaxed meal, yet simple enough for a weeknight.

Why this recipe works

  • Warm, layered flavour: Softened onion, garlic, cumin and cinnamon give the tomato base depth before the carrots and chickpeas simmer gently.
  • Tender with crunch: Slow-simmered carrots and chickpeas are finished with toasted almonds and fresh coriander for contrast.
  • Heat to taste: Serving the harissa on the side lets each person keep the tagine gentle or add more chilli warmth at the table.

Adjust the heat

  • Keep it gentle: Serve the harissa separately and choose a milder paste so the cumin, cinnamon and carrot sweetness stay prominent.
  • For more heat: Stir a little harissa into individual bowls just before serving, adding it gradually so the sauce stays balanced.
  • Balance the chilli: If the harissa tastes sharp or intense, fold it through with extra sauce from the tagine rather than adding it straight on top.

Texture tips

  • Simmer gently: Keep the sauce at a quiet simmer so the carrots soften evenly without the tomato base catching on the bottom.
  • Thicken naturally: Mash a few chickpeas against the side of the pot near the end of cooking to give the sauce more body.
  • Add crunch at the end: Scatter the toasted almonds over the tagine just before serving so they stay crisp.

Make-ahead tips

  • Make the tagine ahead: The carrot and chickpea base keeps well in the fridge and can be reheated gently with a splash of water.
  • Keep toppings separate: Store the coriander, almonds, couscous and harissa separately so the garnish stays fresh and the almonds keep their crunch.
  • Freeze the stew only: Freeze the tagine without couscous or toppings, then defrost overnight in the fridge before reheating until piping hot.

Instructions

  1. Halve and finely slice the onion. Peel the carrots and cut them into thick coins, then finely chop the garlic.
  2. Set a tagine over a low heat (or use a Dutch oven) and warm the olive oil. Add the onion with 0.5 tsp of the salt and cook for 8 to 10 minutes, stirring, until softened and lightly golden.
  3. Stir in the carrots and cook for 3 minutes to coat in the oil. Add the garlic, cumin and cinnamon and cook for 1 minute until fragrant.
  4. Pour in the passata, then add the chickpeas (including their liquid) and the remaining salt and black pepper. Bring to a gentle simmer, cover, and cook for 25 to 30 minutes until the carrots are tender and the sauce has thickened slightly.
  5. Meanwhile, toast the sliced almonds in a dry saucepan over a medium heat for 3 to 5 minutes, stirring often, until golden. Tip them onto a plate straight away so they do not over-brown.
  6. Put the couscous in a heatproof bowl and pour over 300 ml just-boiled water from the kettle. Cover and leave for 5 minutes, then fluff with a fork.
  7. Roughly chop the coriander. Taste the tagine and adjust seasoning with a little more black pepper if needed, then scatter over the coriander and toasted almonds.
  8. Serve the tagine with couscous and a spoonful of harissa on the side for everyone to add to taste. If you like it hotter, stir a little harissa directly into your bowl.

Recipe notes

Tips

  • Keep the tagine at a gentle simmer rather than a rapid boil so the carrots turn tender without the sauce catching.
  • For a smoother finish, mash a few chickpeas against the side of the pot near the end of cooking to naturally thicken the sauce.
  • If serving vulnerable groups, use a harissa you trust for heat level and check it is within its use-by date.

Substitutions

  • Replace Couscous with quinoa for a gluten-free option.
  • Replace Harissa with a milder harissa to keep the heat gentle while keeping the same flavour profile.
  • Replace Sliced almonds with roasted pumpkin seeds for a nut-free crunch.

Storage

  • Refrigerate up to 4 days
  • Cool the tagine quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat with a splash of water until piping hot; add fresh coriander and almonds after reheating. Freeze the tagine (without couscous, coriander, almonds or harissa) for up to 3 months and defrost overnight in the fridge before reheating.
