Moroccan Lamb Kofta Traybake with Peppers and Tomatoes
Why this recipe works
- Efficient traybake method: The kofta and vegetables cook together on one tray, so the lamb juices season the peppers, onions and tomatoes as they roast.
- Warm, savoury spicing: Cumin, sweet paprika and garlic give the lamb depth, while lemon and coriander brighten the finished dish.
- Straightforward shaping and roasting: The kofta are simply mixed, shaped and baked, with no separate sauce or stovetop browning needed.

Texture tips
- Keep the kofta tender: Mix the lamb only until the spices and garlic are evenly distributed; overworking the mixture can make the kofta dense.
- Avoid steaming the vegetables: Use a large tray and shuffle everything halfway if it looks crowded, so the vegetables roast and catch at the edges rather than turning watery.
Make-ahead tips
- Prep ahead safely: The vegetables can be cut ahead, and the kofta mixture can be shaped in advance; keep the raw lamb covered and chilled separately until ready to bake.
- Reheat until piping hot: Reheat leftovers on a baking tray at 200°C (390°F) until the kofta are hot all the way through.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating.
Serving ideas
- Add something to catch the juices: Serve with couscous, rice or warm flatbreads to soak up the tomato-rich pan juices.
- Add a cooling sauce: A spoonful of plain yoghurt or a simple yoghurt-and-lemon sauce works well with the warm spices.
- Finish fresh: Keep the coriander and lemon for serving so the herbs stay bright and the citrus cuts through the richness of the lamb.
Authenticity notes
- Traybake adaptation: Kofta are often grilled or pan-cooked, but roasting them with vegetables is a practical home-style adaptation that keeps the preparation simple.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Drizzle 1 tbsp of the extra virgin olive oil over a large baking tray.
- Cut the yellow onions into wedges, slice the red peppers, and cut the tomatoes into thick wedges. Tip them onto the tray and toss with 1 tbsp of the oil, 1 tsp of the fine sea salt, 0.5 tsp of the black pepper, 1 tsp of the ground cumin and 1 tsp of the sweet paprika.
- Finely grate or crush the garlic. In a mixing bowl, combine the minced lamb with the garlic, remaining 1 tsp ground cumin, remaining 1 tsp sweet paprika, remaining 0.5 tsp black pepper, and remaining 0.5 tsp fine sea salt, then mix until evenly seasoned.
- Shape the lamb mixture into 12 small kofta and nestle them among the vegetables. Drizzle the remaining 1 tbsp oil over the kofta.
- Bake for 20 to 25 minutes, turning the kofta once, until the vegetables are tender and lightly charred at the edges and the kofta are browned and cooked through. If your tray is crowded, give everything a quick shuffle halfway so it roasts rather than steams.
- Cut the lemon into wedges. Roughly chop the fresh coriander and scatter it over the traybake, then serve with the lemon wedges for squeezing over.

Tips
- For the juiciest kofta, mix the lamb just until combined; overworking can make them dense.
- If you are serving anyone vulnerable, make sure the kofta are piping hot all the way through before serving.
Substitutions
- Replace sweet paprika with smoked paprika for a deeper, smokier flavour.
- Replace fresh coriander with fresh parsley if you prefer a milder herbal finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 200°C (390°F) for 10 to 15 minutes until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
