Stuffed Aubergines with Spiced Lamb and Tomato Sauce
Why this recipe works
- Warm, layered flavour: Cumin, cinnamon, garlic and lamb build a deeply savoury filling without needing a long list of spices.
- Bright finish: Fresh tomato and lemon cut through the richness of the lamb and olive oil, keeping the dish balanced.
- Tender and satisfying: Pre-baking the aubergine shells helps them soften fully, while the covered bake keeps the filling moist.

Timing notes
- Plan for two stages: Most of the active work is in hollowing the aubergines and browning the lamb; the oven then does the slow tenderising.
- Let it settle before serving: A short rest after baking helps the filling hold together and allows the sauce to thicken slightly.
Texture tips
- For very tender aubergines: Keep the dish tightly covered for the first part of baking so the aubergines steam gently in the tomato sauce.
- Keep the shells sturdy: Leave a thick enough border when scooping so the aubergines hold their shape once filled and baked.
Ingredient notes
- Choose firm aubergines: Firm, glossy aubergines are easier to hollow and keep a better shape during baking.
- Use ripe tomatoes: Ripe tomatoes collapse into a richer sauce and give the dish better natural acidity.
- Fresh herbs matter here: Fresh coriander brings brightness at the end; parsley is a good milder alternative if preferred.
Make-ahead tips
- Make ahead: The stuffed aubergines can be cooked ahead, cooled and refrigerated, then reheated covered until piping hot.
- Freeze after baking: Cool completely before freezing, then defrost overnight in the fridge before reheating.
- Reheat gently: Reheat covered at 180°C (355°F), adding a splash of water if the tomato sauce has thickened too much.

Instructions
- Heat the oven to 200°C (390°F). Halve the aubergines lengthways and scoop out most of the flesh, leaving a sturdy shell; roughly chop the scooped flesh. Brush the shells with 2 tbsp of the olive oil and set them in a baking dish.
- Bake the aubergine shells for 20 minutes until they start to soften and take on a little colour. Meanwhile, finely chop the onion and crush the garlic. Roughly chop the tomatoes and finely chop most of the coriander, reserving a little for serving.
- Heat 2 tbsp of the olive oil in a frying pan over medium heat and cook the onion for 8 minutes until soft and lightly golden. Stir in the garlic, cumin and cinnamon for 1 minute until fragrant. Add the lamb and cook for 6 to 8 minutes, breaking it up, until browned.
- Stir the chopped aubergine flesh into the lamb mixture and cook for 5 minutes until it begins to soften. Add about a third of the tomatoes and cook for 3 to 4 minutes until they start to collapse. Take off the heat and stir through the chopped coriander.
- Spoon the lamb mixture into the baked aubergine shells, pressing it in so each one is generously filled. Tip the remaining tomatoes around the aubergines in the dish and drizzle over the final 1 tbsp olive oil. Add 200 ml water to the dish and spoon a little tomato over the tops.
- Cover the dish tightly and bake for 25 minutes, then uncover and bake for a further 10 to 12 minutes until the aubergines are very tender and the sauce is rich and glossy. Rest for 5 minutes so the filling settles. Squeeze over lemon juice and scatter with the reserved coriander to serve.

Tips
- When hollowing the aubergines, leave a thick enough border so the shells hold their shape during baking.
- If the sauce looks dry at any point, add a splash of water and baste the aubergines so they stay moist.
- For anyone who is pregnant, elderly, or immunocompromised, make sure the lamb is cooked until piping hot throughout.
Substitutions
- Replace Fresh coriander with Fresh parsley for a milder, more herbaceous finish.
- Replace Lemon with Lime for a sharper citrus note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
