Chicken Fajita Bowl
Why this recipe works
- Built-in pan flavour: Searing the chicken first leaves browned bits in the pan, which season the peppers and onions as they cook.
- Good bowl texture: Fluffy rice, tender chicken, soft black beans and lightly charred vegetables keep each forkful varied.
- Fresh finish: Lime juice and sour cream cut through the smoky spices and make the bowl taste brighter and more balanced.

Texture tips
- Dry the chicken well: Patting the thighs dry before seasoning helps them brown rather than steam in the pan.
- Keep the finish fresh: Add the sour cream and lime after reheating or just before serving so the bowl stays bright and not watery.
Make-ahead tips
- Good for meal prep: The rice, chicken, vegetables and beans can be cooked ahead and refrigerated together for easy portions.
- Store the topping separately: Keep sour cream apart from the hot components and add it only after reheating.
- Reheat gently: Warm the rice and chicken mixture with a splash of water to loosen the grains and prevent the chicken drying out.
Ingredient swaps
- Use Greek yoghurt: Greek yoghurt can replace sour cream for a tangier, lighter-tasting finish.
- Change the pepper: Green pepper works well if you prefer a more savoury, slightly bitter flavour.
Authenticity notes
- Bowl-style fajitas: Traditional fajitas are usually served with tortillas; this version keeps the seared chicken, peppers and onions but serves them over rice for a complete bowl meal.

Ingredients
Instructions
- Rinse the rice briefly, then tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 8 minutes, then fluff with a fork.
- Meanwhile, slice the red onion and red pepper. Pat the chicken thighs dry, then season all over with the smoked paprika, ground cumin and the remaining 0.5 tsp fine sea salt.
- Heat the sunflower oil in a large frying pan over a medium-high heat. Add the chicken and sear for 4 to 5 minutes per side until deeply browned and cooked through. Transfer to a plate to rest for 2 minutes.
- Add the red onion and red pepper to the same pan and cook over a medium heat for 6 to 8 minutes until softened and lightly charred at the edges. If the pan looks dry, add a splash of water and scrape up any browned bits. Slice the chicken, then return it to the pan and toss everything together for 1 minute.
- Drain and rinse the canned black beans, then warm them in the pan for 1 to 2 minutes alongside the chicken and peppers. Divide the rice between two bowls and spoon over the chicken mixture and beans. Finish with sour cream and a generous squeeze of lime juice.
Recipe notes
Tips
- For the best sear, make sure the chicken is dry before seasoning and do not move it around in the pan until it releases easily.
- If cooking for someone vulnerable to food poisoning, ensure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Sour cream with Greek yogurt for a lighter, tangier finish.
- Replace Red pepper with Green pepper for a slightly more bitter, savoury flavour.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate the rice, chicken and vegetables in a sealed container; store the sour cream separately. Reheat the rice and chicken in a microwave or in a frying pan with a splash of water until piping hot, then add sour cream and lime just before serving.
