Arroz con Pollo (Colombian-Style Rice with Chicken)
Why this recipe works
- Built-in savoury depth: Browning the chicken first leaves flavourful bits in the pot, which season the vegetables, rice and stock as they simmer together.
- Efficient one-pot method: The rice cooks in the same pot as the chicken and vegetables, absorbing stock, spices and pan juices without needing a separate side dish.
- Fresh finish: Coriander and lime added at the end lift the richness of the chicken and rice with a clean, citrusy finish.

Timing notes
- Most of the time is hands-off: Once the chicken is browned and the vegetables are softened, the rice and chicken finish together over a low simmer.
- Rest before serving: Keeping the pot covered off the heat for a few minutes helps the rice finish steaming and makes it easier to fluff.
Texture tips
- Keep the simmer gentle: A low, steady bubble helps the rice cook evenly without the bottom catching or the grains becoming heavy.
- Coat the rice first: Stirring the rice through the spiced vegetables before adding stock helps separate the grains and gives a better finished texture.
Make-ahead tips
- Good for portions: Cool the rice and chicken quickly, then refrigerate in airtight containers for easy dinners over the next few days.
- Reheat with moisture: Warm gently with a splash of stock and keep covered so the rice steams back to a tender texture.
- Freezer-friendly: Freeze in portions, defrost overnight in the fridge, then reheat until piping hot throughout.
Ingredient notes
- Use long-grain rice: Long-grain white rice suits this style because it stays more separate than short-grain varieties when simmered with stock.
- Finish with lime to taste: A squeeze of lime at the table adds brightness and lets each serving be adjusted without changing the whole pot.

Ingredients
Instructions
- Heat the sunflower oil in a large, lidded pot over medium-high heat. Add the chicken thighs skin-side down and brown well for 5 to 6 minutes, then turn and brown the other side for 3 to 4 minutes. Transfer the chicken to a plate.
- Reduce the heat to medium and add the red onion, carrot and red pepper to the pot. Cook for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the garlic, ground cumin and ground turmeric and cook for 1 minute until fragrant.
- Stir the long-grain white rice into the spiced vegetables and cook for 1 to 2 minutes so the grains are well coated. Pour in the chicken stock and bring to a gentle simmer, scraping up any browned bits from the base. Nestle the chicken thighs back into the pot, skin-side up.
- Cover and simmer on low for 18 minutes, keeping it at a steady, gentle bubble. Scatter over the frozen peas, cover again and cook for 5 to 7 minutes until the rice is tender and the chicken is cooked through. If the pot looks dry before the rice is tender, add a small splash of stock and continue cooking.
- Remove from the heat, cover and rest for 5 minutes, then fluff the rice with a spoon. Finely chop the fresh coriander and fold most of it through the rice. Cut the lime into wedges and serve with the remaining coriander and lime for squeezing.
