Paneer Butter Masala

Rich, gently spiced and centred on soft cubes of paneer, paneer butter masala is one of the most recognisable North Indian-style vegetarian curries. Its character comes from a smooth tomato sauce mellowed with soaked cashews, onion, ginger, garlic and warm ground spices, then finished with butter and cream for a glossy, silky texture. The sauce should taste rounded rather than sharp, with enough body to coat the paneer without becoming heavy. Served with basmati rice or naan, it makes a generous dinner curry that feels special but is still practical for everyday cooking.

Why this recipe works

  • Layered curry base: Slowly softened onion, ginger, garlic and spices give the tomato sauce a rounded savoury depth before blending.
  • Silky sauce: Soaked cashews, butter and double cream create a smooth, rich sauce that coats the paneer without feeling thin.
  • Gentle, satisfying flavour: Mild chilli powder and garam masala keep the curry aromatic rather than hot, making it easy to serve with rice or naan.

Ingredient notes

  • Use firm paneer: Choose paneer that holds its shape well so the cubes stay intact when stirred through the sauce.
  • Soak the cashews properly: Softened cashews blend more easily and help give the sauce its smooth, restaurant-style texture.
  • Cream affects the finish: Double cream gives the richest result; a lighter cooking cream will make the sauce less luxurious but still creamy.

Texture tips

  • Blend until completely smooth: Give the sauce enough time in the blender so the onion and cashews fully disappear into the tomato base.
  • Keep the heat gentle: After adding the cream, warm the curry without boiling so the sauce stays glossy and does not split.
  • Adjust the sauce gradually: Simmer briefly to thicken, or loosen with a splash of water if the blended sauce becomes too dense.

Common mistakes

  • Do not scorch the spices: Ground spices need only a short stir in the hot fat; cooking them too long can make the sauce taste bitter.
  • Avoid a hard boil: A gentle simmer is enough for the tomato sauce and helps protect the texture of both the cream and paneer.
  • Stir the paneer carefully: Fold the paneer through gently so the cubes warm through without breaking into the sauce.

Make-ahead tips

  • Make the sauce in advance: The blended sauce can be prepared ahead, then reheated gently before adding the paneer, butter and cream.
  • Reheat slowly: Warm leftovers over low heat with a little water, stirring often, until piping hot throughout.
  • Freezes well: Cool completely before freezing, then defrost overnight in the fridge and reheat gently to protect the creamy sauce.

  1. Put the cashew nuts in a heatproof bowl and cover with boiling water from the kettle. Leave to soak for 15 minutes, then drain.
  2. Meanwhile, cut the paneer into bite-sized cubes. Finely slice the onion, then peel and grate the ginger and garlic.
  3. Heat the vegetable oil and half the butter in a saucepan over medium heat. Add the onion with a pinch of the salt and cook for 10 to 12 minutes, stirring, until soft and lightly golden.
  4. Stir in the ginger and garlic and cook for 1 minute until fragrant. Add the ground cumin, ground coriander, ground turmeric, mild chili powder and 1 tsp of the garam masala, and cook for 30 seconds, stirring constantly.
  5. Pour in the tomato passata and water, then bring to a gentle simmer. Cook for 10 minutes, stirring occasionally, until the raw tomato smell has mellowed.
  6. Tip the sauce into a blender with the drained cashew nuts and blend until very smooth. Return to the pan and simmer for 3 to 5 minutes to thicken slightly; add a splash more water if it becomes too thick.
  7. Add the paneer and cook gently for 5 minutes, stirring carefully so the cubes stay intact. Stir in the remaining butter, the double cream and the remaining garam masala, then warm through for 1 to 2 minutes without boiling.
  8. Taste and adjust with the remaining salt if needed. Serve hot, with basmati rice or naan if you like.

Tips

  • For the smoothest sauce, blend while still warm and give it a full minute in the blender so the cashews completely disappear.
  • Keep the heat low after adding the double cream so the sauce stays silky and does not split.
  • If serving vulnerable groups, use pasteurised dairy and ensure the curry is heated until piping hot throughout.

Substitutions

  • Replace double cream with cooking cream for a slightly lighter finish.
  • Replace vegetable oil with light-olive-oil for a fruitier background note.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat with a splash of water, stirring often, until piping hot; avoid boiling once hot. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
