Caldo de Res (Mexican Beef and Vegetable Soup)
Why this recipe works
- Gentle depth: Bone-in beef shank, onion, garlic and bay leaves build a savoury broth without making the soup heavy.
- Slow simmered: A low simmer tenderises the beef while keeping the broth clear and light.
- Bright finish: Lime and coriander are added at the table, so each bowl can be sharpened and refreshed to taste.

Timing notes
- Mostly hands-off: The active prep is short, but the beef needs a steady simmer to become tender.
- Serve once the vegetables are tender: The soup is best ladled up while the potatoes and carrots are cooked through but still holding their shape.
Ingredient notes
- Use bone-in beef if possible: Beef shank adds body and savoury depth to the broth as it simmers.
- Keep the vegetables chunky: Larger pieces of potato and carrot are less likely to break down during the final simmer.
- Finish with lime: Adding lime at the table keeps the broth fresh and lets each serving be adjusted.
Common mistakes
- Boiling too hard: A vigorous boil can cloud the broth and toughen the meat; keep it at a gentle simmer.
- Adding vegetables too early: Potatoes, carrots and corn should go in after the beef is tender so they stay intact.
- Forgetting to adjust seasoning: Taste the broth after the tomatoes have simmered, then season again if needed before serving.
Make-ahead tips
- Make ahead: The soup can be cooked in advance, cooled quickly and refrigerated in a sealed container.
- Reheat gently: Warm on the hob until piping hot throughout, adding a splash of water if the broth has reduced.
- Freezer friendly: Freeze after cooking, then defrost overnight in the fridge before reheating.

Instructions
- Put the beef shank in a stockpot with the vegetable broth. Halve the onion and lightly crush the garlic cloves, then add both to the pot with the bay leaves, fine sea salt and black pepper. Bring to the boil, then reduce to a gentle simmer.
- Simmer gently, partially covered, for 75 to 85 minutes, skimming any foam from the surface as needed. The beef is ready when it is tender and starting to pull away from the bone. Keep the heat low so the broth stays clear and light.
- Meanwhile, chop the tomatoes and cut the potatoes and carrots into chunky, bite-sized pieces so they hold their shape. Once the beef is tender, stir in the tomatoes and simmer for 10 minutes to lightly enrich the broth. Taste and adjust seasoning with a little more fine sea salt or black pepper if needed.
- Add the potatoes and carrots and simmer for 15 minutes, or until just tender. Stir in the sweet corn kernels and cook for 5 minutes more, until the corn is hot and the vegetables are cooked but still intact. Remove and discard the bay leaves.
- Cut the limes into wedges and roughly chop the fresh coriander. Ladle the soup into bowls, making sure each portion gets beef and vegetables. Serve with lime to squeeze over and coriander scattered on top.
Recipe notes
Tips
- Keep the simmer very gentle and skim occasionally for a cleaner, lighter broth.
- For the best texture, cut the potatoes and carrots into larger chunks so they do not break down during simmering.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the soup is reheated until piping hot throughout.
Substitutions
- Replace Beef shank with Beef stew meat for a boneless version; start checking tenderness after 60 minutes as it can cook faster.
- Replace Fresh coriander with Fresh parsley for a milder, more herbaceous finish.
- Replace Yukon Gold potato with Red potato for firmer pieces that hold their shape well.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently on the hob until piping hot; add a splash of water if it has reduced. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
