Caldo de Pollo (Mexican Chicken Broth with Vegetables)
Why this recipe works
- Clear, clean broth: A gentle simmer and early skimming keep the broth light, clear and well balanced rather than cloudy or heavy.
- Simple aromatic depth: Chicken, onion, garlic and bay build a savoury base before the vegetables add sweetness and body.
- Bright finish: Lime is added at the table, so each bowl keeps a fresh, clean acidity without dulling the broth during cooking.

Timing notes
- Mostly hands-off cooking: The active preparation is short; most of the flavour develops while the chicken simmers gently.
- Serve once the vegetables are tender: The courgette is best when just tender and still bright, so avoid holding the soup on the heat for too long after it is added.
- Cool before storing: Cool the soup quickly before refrigerating or freezing, then reheat until piping hot before serving.
Ingredient notes
- Use skin-on chicken for body: Skin-on drumsticks add savoury depth and a little richness while keeping the broth lighter than a heavily reduced stock.
- Cut vegetables evenly: Keep the carrot and potato pieces similar in size so they become tender at the same pace.
- Add lime to taste: Serve lime wedges alongside the soup so the acidity can be adjusted bowl by bowl.
Common mistakes
- Avoid a hard boil: A rolling boil can cloud the broth and make the chicken less tender; keep it at a steady, gentle simmer.
- Do not overcook the courgette: Add the courgette near the end so it softens without collapsing into the broth.
- Taste before serving: The broth should taste rounded but still light, so adjust the salt after the chicken has simmered.
Make-ahead tips
- Make the broth ahead: The chicken and broth can be prepared in advance, then reheated gently before serving.
- Reheat gently: Warm on the hob until piping hot, adding a splash of water if the broth has reduced in the fridge.
- Freezes well: Freeze in sealed containers and defrost overnight in the fridge; finish with fresh coriander and lime after reheating.

Ingredients
Instructions
- Put the chicken drumsticks in a stockpot with the water. Halve the onion (leave the skin on if clean), lightly crush the garlic, then add both to the pot with the bay leaves and fine sea salt. Bring to a gentle simmer over medium heat, skimming off any foam for the first 10 minutes.
- Keep the broth at a steady, gentle simmer (not a rolling boil) for 30 minutes, until the chicken is cooked through and the broth tastes full but still light. Lift out the chicken to a bowl; discard the onion, garlic and bay leaves. Taste the broth and add a little more fine sea salt if needed.
- While the chicken cools slightly, peel and cut the carrot and russet potato into bite-size pieces. Add them to the broth and simmer until the potatoes are nearly tender. This should take about 12 to 15 minutes.
- Cut the courgette into bite-size pieces and add to the pot. Simmer for 5 to 7 minutes, until the courgette is just tender and still bright. Meanwhile, pull the chicken from the bones into large pieces and return it to the soup to warm through.
- Finely chop most of the fresh coriander, reserving a little for serving. Cut the limes into wedges. Ladle the caldo into bowls and finish with coriander and a squeeze of lime to taste.
Recipe notes
Tips
- For a clearer broth, keep the soup at a gentle simmer and skim any foam early on rather than letting it boil hard.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout and the juices run clear before shredding.
Substitutions
- Replace chicken drumsticks with chicken thighs for a slightly richer broth.
- Replace russet potato with Yukon Gold potato for a creamier texture while keeping the soup clear.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently on the hob until piping hot; add a splash of water if it has reduced. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
