Caldo de Pollo con Verduras (Mexican Chicken and Vegetable Soup)
Why this recipe works
- Clean, savoury broth: Bone-in chicken, onion and garlic create a simple broth with enough depth to carry the vegetables without needing a heavy seasoning base.
- Staggered vegetable cooking: Adding the vegetables in stages keeps the potato and carrot tender while preventing the cabbage and courgette from collapsing.
- Fresh finish: Lime juice and coriander are added at the end, giving the warm broth a bright lift without dulling their flavour.

Timing notes
- Prep while the broth simmers: Use the initial chicken simmering time to cut the vegetables, so the rest of the recipe moves steadily once the broth is ready.
- Best served after finishing: The soup is at its clearest and freshest soon after the lime and coriander are added.
Texture tips
- Keep the vegetables distinct: Follow the staggered additions closely; courgette needs only a short simmer or it can become too soft.
- For a clearer broth: Maintain a gentle simmer and skim early foam from the surface to keep the broth clean-tasting and clear.
Ingredient notes
- Bone-in chicken matters: Drumsticks add more flavour to the broth than boneless meat and stay moist during the longer simmer.
- Adjust the lime at the end: Add lime after the pot comes off the heat, then offer extra wedges so each bowl can be brightened to taste.
Make-ahead tips
- Good for leftovers: Cool the soup quickly and refrigerate in a sealed container for up to 3 days.
- Freezer-friendly: Freeze the cooled soup for up to 3 months, then defrost overnight in the fridge before reheating gently.
- Refresh before serving: Reheat until piping hot, then finish with fresh lime and coriander to restore brightness.

Ingredients
Instructions
- Halve the onion and lightly crush 2 garlic cloves. Put them in a stockpot with the chicken drumsticks, 1 tsp of the fine sea salt, and 2 l water.
- Bring to the boil, then reduce to a gentle simmer and skim off any foam. Simmer for 35 minutes, or until the chicken is cooked through and the broth tastes savoury.
- Meanwhile, peel and cut the carrot and russet potato into chunky pieces. Cut the green cabbage into bite-size pieces, and cut the courgette into thick half-moons; finely chop the remaining garlic.
- Add the carrot and potato to the pot and simmer for 10 minutes. Add the cabbage and simmer for 8 minutes, then add the courgette and simmer for 5 to 7 minutes until all the vegetables are tender but still distinct.
- Stir in the chopped garlic and the remaining 1 tsp fine sea salt, then simmer for 2 minutes. Take off the heat and squeeze in the juice of 1 lime.
- Finely chop the fresh coriander. Ladle the soup into bowls and serve with the remaining lime cut into wedges, plus coriander scattered over the top.
Recipe notes
Tips
- Keep the simmer gentle to maintain a clear broth; a hard boil will make it cloudy.
- For the cleanest flavour, skim the surface a couple of times during the first 10 minutes of simmering.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken is piping hot all the way through before serving.
Substitutions
- Replace Chicken drumsticks with Chicken thighs for a slightly richer broth; simmer until the chicken is cooked through.
- Replace Lime with Lemon for a similar bright finish.
- Replace Fresh coriander with Fresh parsley if you prefer a milder herb note.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan until piping hot; add a fresh squeeze of lime and a little fresh coriander at the end. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
