Tarka Dal with Ghee and Dried Chillies

In tarka dal, soft-cooked lentils are finished with a sizzling spiced fat, giving a simple pot of dal its defining aroma and depth. This version uses red lentils, which break down quickly into a creamy, spoonable texture with ginger, turmeric and cumin. The final tarka of ghee, cumin seeds, dried red chilli and sliced garlic brings richness, savoury warmth and a gentle chilli heat without making the dish heavy. Served with steamed basmati rice or chapatis, it makes an easy vegetarian dinner that feels both comforting and complete.

Why this recipe works

  • Aromatic finish: The hot ghee tarka blooms the cumin, dried chilli and garlic, giving the dal a fragrant, savoury finish.
  • Naturally creamy: Red lentils break down as they simmer, creating a soft, creamy texture without needing cream.
  • Simple technique: The dal cooks in one pan while the tempering takes only a minute or two, making the method straightforward and easy to manage.

Adjust the heat

  • For less heat: Use fewer dried chillies, or leave them whole and remove them before serving for a gentler flavour.
  • For more warmth: Break the dried chilli before frying, or use chilli flakes for a more evenly distributed heat.
  • Keep the flavour balanced: Let the chilli and cumin sizzle briefly, but avoid darkening the garlic too much, as bitterness can overpower the dal.

Ingredient notes

  • Red lentils cook quickly: Red lentils soften and collapse faster than many other dals, which makes them ideal for a creamy weeknight version.
  • Ghee adds depth: Ghee gives the tarka its rounded, nutty richness; butter can be used, but it should be kept over gentle heat so it does not burn.
  • Allow more time for toor dal: Toor dal gives a more traditional flavour but takes longer to become fully tender, so the simmering time will need extending.

Texture tips

  • For a smoother dal: Whisk the cooked lentils briefly before adding the tarka to make the texture more uniform and creamy.
  • Loosen as needed: If the dal thickens too much during cooking or reheating, stir in a splash of water until it returns to a spoonable consistency.

Make-ahead tips

  • Good for meal prep: The cooked dal keeps well in the fridge and reheats gently with a little water to restore its texture.
  • Freezes well: Cool completely before freezing in a sealed container, then defrost overnight in the fridge before reheating.
  • Reheat gently: Warm in a saucepan, stirring often, until piping hot throughout before serving.

  1. Rinse the red lentils in a sieve under cold water until the water runs clearer. Peel the ginger and finely grate it; peel and thinly slice the garlic. Set aside a small handful of the coriander for finishing, then roughly chop the rest.
  2. Tip the lentils into a saucepan with the water, grated ginger, ground turmeric, ground cumin and fine sea salt. Bring to the boil, then reduce to a gentle simmer and cook for 20 to 25 minutes, stirring occasionally, until the lentils are very soft and the dal looks creamy. If it thickens too much, loosen with a splash of water.
  3. While the dal simmers, make the tarka: warm the ghee in a small frying pan over a medium heat. Add the cumin seeds and dried red chilli and fry for 30 to 60 seconds until the seeds darken slightly and the chillies deepen in colour. Add the sliced garlic and cook for 30 to 60 seconds until pale golden and fragrant.
  4. Stir the chopped coriander into the dal and simmer for 1 minute. Take the dal off the heat, then carefully pour the hot ghee tarka over the top. Sprinkle with the reserved coriander and serve straight away.

Tips

  • Keep the dal at a gentle simmer and stir from time to time so it does not catch on the base of the pan.
  • For a smoother texture, whisk the cooked dal vigorously for 20 to 30 seconds before adding the tarka.
  • If serving vulnerable people, ensure the dal is piping hot throughout before serving.

Substitutions

  • Replace red lentils with toor dal for a more traditional flavour, but allow a longer simmer until fully tender.
  • Replace ghee with unsalted butter for a similar richness, keeping the heat low so it does not burn.
  • Replace dried red chili with a smaller amount of chili flakes for a more even heat.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water, stirring often, until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
