Vegan Palak Dal (Spinach and Lentil Soup)
Why this recipe works
- Creamy without dairy: Red lentils break down as they simmer, and a brief blend thickens the dal while keeping some texture.
- Fragrant finish: The quick tempering blooms garlic, cumin and paprika in hot oil, giving the finished dal a deeper, more aromatic flavour.
- Brightened at the end: Tomato and lemon lift the earthy lentils and spinach, keeping the soup fresh rather than heavy.

Adjust the heat
- For a gentler dal: Reduce the hot paprika or replace it with sweet paprika for warmth without noticeable heat.
- For more heat: Use cayenne in place of the paprika, or add a little extra chilli to the tempering just before serving.
Texture tips
- For a smoother finish: Blend the dal for longer once the lentils are fully soft, then loosen with a splash of water if needed.
- For a rustic texture: Pulse only briefly with the immersion blender so some lentils, tomato and spinach remain visible.
Common mistakes
- Do not burn the tempering: Garlic and ground spices can darken quickly in hot oil, so remove the pan from the heat as soon as the garlic turns pale gold.
- Adjust thickness at the end: Dal thickens as it sits; add a little water when reheating or just before serving if you prefer a looser soup.
Make-ahead tips
- Good for batch cooking: The dal keeps well in the fridge and can be frozen in portions, making it practical for lunches or quick dinners.
- Reheat gently: Warm over low heat until piping hot, adding a splash of water if the lentils have thickened in storage.

Ingredients
Instructions
- Heat 1 tbsp sunflower oil in a large pot over medium heat. Finely grate the ginger and thinly slice 2 garlic cloves, then cook for 30 to 60 seconds until fragrant. Stir in the ground turmeric.
- Rinse the red lentils, then add them to the pot with the water and fine sea salt. Bring to the boil, then reduce to a gentle simmer and cook for 12 to 15 minutes, stirring occasionally, until the lentils are very soft. Skim any foam if needed.
- Dice the tomatoes and stir them into the pot. Simmer for 5 minutes until the tomatoes soften and the dal looks slightly thickened. Add the spinach in handfuls and cook for 2 to 3 minutes until wilted.
- Blend the soup briefly with an immersion blender, leaving some texture. Squeeze in lemon juice to taste and season with black pepper. Keep the dal on a very low heat while you make the tempering.
- Heat the remaining 1 tbsp sunflower oil in a small saucepan over medium heat. Thinly slice the remaining garlic and cook for 30 to 60 seconds until just turning pale gold, then stir in the ground cumin and hot paprika for 10 seconds. Immediately pour the tempering over the dal, stir well, and serve hot.
Recipe notes
Tips
- For a smoother, creamier texture, blend for longer; for a more rustic dal, blend only a few pulses.
- Keep the garlic moving in the tempering and take it off the heat as soon as it turns pale gold, as it will continue to darken in the hot oil.
- If you prefer a looser soup, add a splash of water at the end and warm through for 1 to 2 minutes before serving.
Substitutions
- Replace hot paprika with cayenne pepper for a sharper heat.
- Replace sunflower oil with olive oil for a fruitier finish.
- Replace lemon with lime for a slightly different citrus note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, adding a splash of water if it has thickened, until piping hot. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
