Vegetarian Nut Roast
Why this recipe works
- Deep savoury flavour: Toasted hazelnuts, browned mushrooms, thyme and soy sauce build a rich, roast-worthy base without relying on meat.
- Crisp top, firm centre: Breadcrumbs and egg help the loaf set properly, while baking gives the surface a lightly crisp finish.
- Built for roast dinners: Thick slices hold their shape well and pair naturally with onion gravy, vegetables, potatoes and other classic roast sides.

Texture tips
- Cook off the mushroom moisture: Keep cooking the mushrooms until the pan looks fairly dry; excess liquid can make the roast loose or crumbly.
- Pack the tin firmly: Press the mixture well into the loaf tin so it bakes into a compact, sliceable roast.
- Rest before slicing: Let the loaf stand in the tin before turning it out, which helps the crust settle and keeps the slices neater.
Make-ahead tips
- Prepare ahead: The nut roast can be baked in advance, cooled completely and refrigerated until needed.
- Keep gravy separate: Store the roast and onion gravy in separate airtight containers so the slices keep their texture.
- Reheat gently: Warm slices on a baking tray at 180°C (355°F) until piping hot, and loosen the gravy with a little vegetable stock if needed.
Ingredient swaps
- Swap the nuts: Walnuts can replace hazelnuts for a softer texture and a more buttery flavour.
- Change the herbs: Fresh rosemary works well instead of thyme if you prefer a more robust, piney note.
- Make it gluten-free: Use gluten-free breadcrumbs in both the loaf and the gravy.
Authenticity notes
- British home-style centrepiece: Nut roast is a familiar meat-free main for British roast dinners, especially when served with gravy and traditional vegetable sides.
- Serve with gravy: Onion gravy gives the loaf moisture and savoury depth, making it feel closer to a full roast dinner main.

Instructions
- Heat the oven to 180°C (355°F). Tip the hazelnuts onto a tray and toast for 8 to 10 minutes until fragrant, then cool slightly.
- Lightly grease a loaf tin and set aside. Roughly chop the toasted hazelnuts, then finely chop the onion and mushrooms.
- In a frying pan over medium heat, cook the onion with a pinch of the salt for 6 to 8 minutes until softened. Add the mushrooms and cook for 10 to 12 minutes until their moisture has cooked off and the pan looks fairly dry.
- Stir in the thyme and 2 tablespoons soy sauce, then cook for 1 minute. Tip into a mixing bowl and leave to cool for 5 minutes so the eggs do not scramble.
- Add the lentils, chopped hazelnuts, breadcrumbs, eggs, remaining salt and pepper to the bowl. Mix well, lightly crushing some of the lentils so the mixture holds together when pressed.
- Pack the mixture firmly into the loaf tin and smooth the top. Bake for 35 to 40 minutes until set, crisp on top and pulling slightly from the sides.
- Meanwhile, make the gravy: finely slice the remaining onion and cook in a saucepan over medium-low heat with a splash of the vegetable stock for 10 to 12 minutes until soft and lightly golden. Add the remaining stock and soy sauce, bring to a simmer, then whisk in the breadcrumbs and simmer for 3 to 5 minutes until lightly thickened.
- Rest the nut roast in the tin for 10 minutes, then turn out and slice thickly. Serve with the onion gravy and a little extra black pepper.
Recipe notes
Tips
- For clean slices, let the nut roast rest the full 10 minutes, then use a serrated knife and wipe the blade between cuts.
- If your mushrooms are very wet, keep cooking until the pan is almost dry before mixing; this stops the roast turning crumbly.
- If serving anyone vulnerable, use eggs stamped with the British Lion mark or another recognised food safety scheme.
Substitutions
- Replace Hazelnuts with Walnuts for a softer, more buttery texture.
- Replace Fresh thyme with Fresh rosemary for a more robust, piney flavour.
- Replace Breadcrumbs with Gluten-free bread crumbs to make the roast gluten-free.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate the nut roast and gravy in separate airtight containers. Reheat slices on a baking tray at 180°C (355°F) for 12 to 15 minutes until piping hot; reheat gravy gently in a saucepan, loosening with a splash of vegetable stock if needed.
