Vegetarian Nut Roast with Onion Gravy

A vegetarian nut roast brings the structure of a traditional roast dinner to a meat-free centrepiece: a savoury loaf of chopped nuts, vegetables and oats, baked until firm enough to slice. In this version, cashews give a mellow richness while mushrooms, carrot, thyme and parsley add moisture, earthiness and fresh herb flavour. The egg-bound mixture sets neatly in the loaf tin, with a crisp golden top and a hearty, sliceable texture. Served with glossy onion gravy made with vegetable stock and soy sauce, it works well with roast potatoes, seasonal vegetables and all the usual Sunday dinner trimmings.

Why this recipe works

  • Deep savoury base: Cooking the onion, carrot and mushrooms before baking removes excess moisture and builds a richer flavour.
  • Golden top, sliceable centre: Oats, egg and chopped nuts help the loaf set firmly while the surface bakes to a crisp, deeply golden finish.
  • Built-in gravy: The onion gravy uses the same pan to capture browned vegetable flavour, giving the dish a hearty finish without meat stock.

Texture tips

  • Cook off mushroom moisture: Let the mushrooms cook until the pan looks almost dry; too much liquid can stop the loaf setting cleanly.
  • Pack the loaf firmly: Press the mixture tightly into the tin so there are no loose gaps, which helps the roast hold together when sliced.
  • Rest before slicing: Leave the nut roast in the tin after baking so the structure settles and the crust stays intact.

Make-ahead tips

  • Prepare ahead: The loaf can be baked in advance, cooled completely and refrigerated in slices for easy reheating.
  • Keep gravy separate: Store the onion gravy separately so the slices do not soften before serving.
  • Reheat gently: Warm the slices in a 180°C (355°F) oven until piping hot, and reheat the gravy in a saucepan until steaming.

Ingredient notes

  • Choose nuts for flavour: Cashews give a mellow, slightly creamy flavour, while walnuts make the roast deeper and more robust.
  • Keep the nuts coarse: Roughly chopped nuts give the loaf better bite than finely ground nuts, which can make the texture dense.
  • Use tamari carefully: Tamari can replace soy sauce for similar savoury depth, but seasoning levels vary, so adjust the gravy to taste.

Serving ideas

  • Classic roast sides: Serve with roast potatoes and seasonal vegetables for a complete vegetarian roast dinner.
  • Add gravy at the table: Spoon the warm onion gravy over the slices just before serving to keep the loaf moist without softening the crust too early.

  1. Heat the oven to 180°C (355°F). Lightly oil a loaf pan.
  2. Finely chop 1 large yellow onion and slice the cremini mushrooms. Coarsely grate the carrots, strip the thyme leaves from 2 sprigs, and finely chop the parsley.
  3. Heat 2 tbsp olive oil in a large frying pan over medium heat. Cook the onion with the grated carrot for 6 to 8 minutes until softened, then add the mushrooms and cook for 8 to 10 minutes until their liquid has evaporated and the pan looks fairly dry.
  4. Tip the cooked vegetables into a mixing bowl and leave to cool for 5 minutes. Roughly chop the cashew nuts, then stir them into the bowl with the rolled oats, thyme leaves and parsley.
  5. Beat the eggs, then mix them into the nut roast mixture until it holds together when pressed. Pack firmly into the loaf pan and smooth the top.
  6. Bake for 35 to 40 minutes until the top is crisp and deeply golden, and the loaf feels set when pressed. Rest in the tin for 10 minutes so it slices cleanly.
  7. While the nut roast bakes, make the gravy: heat 1 tbsp olive oil in the same frying pan over medium heat. Thinly slice the remaining yellow onion and cook with 2 sprigs fresh thyme for 12 to 15 minutes, stirring often, until soft and well browned.
  8. Stir in the soy sauce, then pour in the vegetable stock and scrape up any browned bits from the pan. Simmer for 8 to 10 minutes until glossy and lightly thickened, then remove the thyme sprigs.
  9. Turn out the nut roast, slice thickly, and serve with the onion gravy. If you like, spoon a little gravy over the slices just before serving to keep them moist.

Serving suggestions

This recipe pairs well with:

Roast potatoes Seasonal vegetables

Tips

  • For the best texture, cook the mushrooms until the pan is almost dry; excess moisture can make the nut roast crumbly.
  • Pack the mixture firmly into the loaf pan and let it rest after baking, as this helps it become properly sliceable.
  • If serving vulnerable groups, use eggs stamped with the British Lion mark or another trusted food safety scheme.

Substitutions

  • Replace cashew nuts with walnuts for a deeper, more robust nut flavour.
  • Replace soy sauce with tamari for a similar savoury depth.

Storage

  • Refrigerate up to 3 days
  • Cool the nut roast completely, then refrigerate slices in a sealed container. Freeze slices well wrapped; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot. Store gravy separately and reheat gently in a saucepan until steaming.
