Roast Spring Lamb with Rosemary and Red Wine Gravy
Why this recipe works
- Built-in pan flavour: The lamb, herbs, lemon and vegetables roast together, creating browned juices that give the gravy depth without extra complexity.
- Classic roasting method: Starting the lamb at 220°C (430°F) helps brown the surface before gentler roasting at 180°C (355°F) finishes the meat evenly.
- Complete roast dinner: Potatoes, carrots, carved lamb and red wine gravy make a full, satisfying meal from one roasting pan.

Timing notes
- Rest before carving: Let the lamb rest for the full 15 minutes so the juices settle and the meat carves more cleanly.
- Serve after the gravy is finished: Make the gravy while the lamb rests, then carve just before serving so the meat stays warm and juicy.
Common mistakes
- Carving too soon: Cutting into the lamb straight from the oven can send the juices onto the board rather than keeping them in the meat.
- Checking temperature near the bone: For the most accurate reading, place the thermometer in the thickest part of the meat away from the bone.
- Rushing the gravy: Let the wine bubble briefly before adding the stock, then simmer until the sauce is glossy and lightly thickened.
Ingredient notes
- Bone-in lamb leg: A bone-in leg gives the roast structure and helps create deeply savoury pan juices for the gravy.
- Fresh herbs work best: Fresh rosemary brings a clean, resinous aroma that suits lamb especially well; thyme gives a softer alternative.
- Choose a drinkable wine: Use a red wine with enough body for the gravy, as its flavour concentrates as it simmers.
Make-ahead tips
- Prepare the vegetables early: Scrub the potatoes and cut the carrots ahead of time, then keep them covered and chilled until roasting.
- Freeze with gravy: Leftover sliced lamb freezes best with a little gravy to help keep it moist when reheated.
- Reheat gently: Defrost overnight in the fridge, then reheat with gravy in a 180°C (355°F) oven until piping hot.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Pat the lamb dry and set it in a roasting pan.
- Finely chop the garlic and rosemary leaves. Zest the lemon, then cut it in half and squeeze the juice into a small bowl, catching any pips.
- Stir the olive oil, garlic, rosemary, lemon zest, lemon juice, fine sea salt and black pepper together. Rub the mixture all over the lamb, working it into any natural seams.
- Roast the lamb for 20 minutes to brown. Reduce the oven to 180°C (355°F) and continue roasting for 45 minutes for medium, or until a thermometer reads 60°C (140°F) in the thickest part away from the bone.
- While the lamb roasts, scrub the new potatoes and peel the carrots. Cut any larger potatoes in half and cut the carrots into chunky batons.
- After the lamb has had its initial 20 minutes, add the potatoes and carrots to the roasting pan around the lamb and turn them in the pan juices. Return to the oven and roast, turning once halfway, until the potatoes are tender and the carrots are caramelised at the edges.
- Lift the lamb onto a board and rest for 15 minutes. Transfer the potatoes and carrots to a warm serving dish.
- Place the roasting pan over a medium heat on the hob and whisk in the plain flour for 1 minute. Pour in the red wine and bubble for 2 to 3 minutes, scraping up the browned bits, then whisk in the beef stock and simmer until glossy and lightly thickened.
- Carve the lamb and serve with the roast potatoes and carrots. Spoon over the red wine gravy.
Recipe notes
Tips
- For the juiciest lamb, aim for 60°C (140°F) for medium, then let it rise a few degrees as it rests.
- If the gravy looks a little thin, simmer it for a few minutes more; if it is too thick, loosen with a splash of beef stock.
- Food safety: if serving vulnerable guests, cook lamb to at least 70°C (160°F) and rest well before carving.
Substitutions
- Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace Red wine with dry white wine for a lighter gravy.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Freeze sliced lamb with a little gravy for best results; defrost overnight in the fridge and reheat in a 180°C (355°F) oven with gravy until piping hot.
