Lanzhou Beef Noodle Soup

Known for its clear, aromatic broth and generous bowls of wheat noodles, Lanzhou beef noodle soup is a defining Chinese noodle dish with a clean yet deeply savoury character. The broth is kept bright by blanching the beef first, then simmering it gently with ginger, spring onion, star anise, cassia cinnamon and Sichuan peppercorns. Thin slices of brisket, crisp daikon, fresh coriander and chilli oil give each bowl a satisfying mix of tenderness, fragrance, crunch and heat. It is a slow-cooked dish, but most of the time is hands-off, making it well suited to a considered weekend dinner or make-ahead broth.

Why this recipe works

  • Clear, clean broth: Blanching the beef first and simmering it gently helps keep the broth clear and refined rather than heavy.
  • Aromatic depth: Ginger, spring onion and warming spices build savoury complexity without masking the beef.
  • Balanced bowl texture: Tender sliced brisket, chewy wheat noodles, crisp daikon and fresh coriander create contrast in every bowl.

Authenticity notes

  • Lanzhou-style character: The defining features are a clear beef broth, wheat noodles, sliced beef, radish, fresh herbs and chilli oil.
  • Practical noodle choice: Using ready-made wheat noodles keeps the recipe achievable at home while preserving the springy noodle texture.

Timing notes

  • Mostly hands-off simmering: The active work is mainly blanching, slicing and assembling; the flavour develops during the slow broth simmer.
  • Rest before slicing: Letting the brisket rest briefly makes it easier to cut into neat slices across the grain.
  • Assemble just before serving: Cook the noodles and add the fresh toppings at the end so they stay springy, crisp and bright.

Adjust the heat

  • For a milder bowl: Leave the chilli oil off the finished bowls and serve it at the table for individual adjustment.
  • For more heat: Add extra chilli oil to taste once the broth is ladled over the noodles.
  • Keep the broth balanced: Add chilli oil gradually so the spice enhances the beef broth rather than overwhelming its clean aromatics.

Make-ahead tips

  • Keep components separate: Store the broth and beef together, but keep noodles, coriander, daikon and chilli oil separate until serving.
  • Reheat gently: Warm the broth and beef gently until piping hot, then refresh the noodles briefly in boiling water before assembling.
  • Freeze the broth and beef: The broth and sliced beef freeze well; add fresh noodles and toppings after reheating for the best texture.

Instructions
Print
  1. Slice the ginger. Trim the spring onions, then cut them into 5 cm lengths.
  2. Put the beef brisket in a stockpot and cover with cold water. Bring to the boil for 5 minutes to blanch, then drain and rinse the beef and pot to keep the broth clear.
  3. Return the brisket to the clean pot and add the beef stock, ginger, spring onion, star anise, cassia cinnamon and Sichuan peppercorns. Bring to a gentle simmer, skimming any foam, then cover and cook very gently for 90 to 110 minutes until the beef is tender but still sliceable.
  4. Lift out the beef and rest it for 10 minutes, then slice thinly across the grain. Strain the broth into a clean saucepan and stir in the light soy sauce; keep it at a low simmer while you finish the bowls.
  5. Peel the daikon radish and cut it into fine matchsticks. Pick the fresh coriander leaves and tender stems.
  6. Bring a pot of water to the boil and cook the stir-fry wheat noodle until just tender. Drain well, then divide between 4 bowls.
  7. Top each bowl with sliced beef and a small handful of daikon. Ladle over the hot broth, then finish with fresh coriander and a spoonful of chilli oil to taste.

Recipe notes

Tips

  • Keep the broth at the gentlest simmer you can manage; a hard boil will make it cloudy and can toughen the brisket.
  • For a cleaner, more aromatic broth, toast the star anise, cassia cinnamon and Sichuan peppercorns in a dry pan for 30 to 60 seconds before adding them to the pot.
  • If serving children or anyone sensitive to heat, add the chilli oil at the table so each person can adjust the spice level.

Substitutions

  • Replace Beef brisket with beef chuck roast for a slightly richer, more shreddable texture.
  • Replace Stir-fry wheat noodle with spaghetti for a similar chew, cooking it until just tender.
  • Replace Daikon radish with carrot for a milder, sweeter crunch.

Storage

  • Refrigerate up to 3 days
  • Store the broth and sliced beef together in an airtight container, and keep the noodles and toppings separate. Reheat the broth gently until piping hot, then warm the noodles briefly in boiling water before assembling; add fresh coriander and chilli oil at the end. Freeze broth and beef for up to 2 months; defrost overnight in the fridge before reheating.
