Masala Arrabbiata Prawn Pasta
Why this recipe works
- Bold spiced sauce: Hot paprika gives the sauce its arrabbiata-style heat, while cumin and garam masala add warmth and depth.
- Fast cooking: The tomato sauce simmers briefly and the prawns cook directly in it, keeping the whole dish practical for a quick dinner.
- Fresh finish: Lemon and coriander lift the rich tomato base and keep the spices from tasting heavy.

Adjust the heat
- For a gentler sauce: Swap the hot paprika for smoked or sweet paprika, keeping the cumin and garam masala for warmth rather than sharp heat.
- For more heat: Add extra hot paprika or a pinch of chilli flakes when blooming the spices so the heat infuses the oil.
- Keep the heat rounded: Finish with lemon gradually and taste as you go; acidity helps sharpen the sauce without making it harsher.
Ingredient notes
- Use fresh spices: Garam masala and ground cumin lose impact over time, so fresher spices will give the sauce a fuller, more aromatic flavour.
- Choose raw peeled prawns: Raw prawns cook quickly in the sauce and stay more tender than pre-cooked prawns, which can become rubbery when reheated.
- Add lemon to taste: A little lemon brightens the tomato sauce, but too much can dominate the spices, so add it gradually at the end.
Common mistakes
- Do not brown the garlic: Keep the heat moderate and stir often; browned garlic can make the sauce taste bitter.
- Avoid overcooking the prawns: Take them off the heat once they are pink, opaque and just cooked through, as they will continue to firm slightly in the hot sauce.
- Do not let the sauce get too tight: Use a splash of reserved pasta water if needed so the sauce coats the penne rather than sitting heavily on it.
Serving ideas
- Serve with something simple: A crisp green salad or lightly dressed cucumber works well alongside the warm spices and tomato heat.
- Finish with fresh coriander: Scatter the remaining coriander over the pasta just before serving for freshness and colour.
- Pair with a cooling drink: A chilled lager, sparkling water with lemon, or a lightly sweet iced tea balances the spice.

Instructions
- Bring a large pot of water to the boil and season it with 1 tsp of the fine sea salt. Cook the penne until al dente, then drain, reserving a small splash of the cooking water.
- Meanwhile, warm the extra virgin olive oil in a large frying pan over medium heat. Add the garlic and cook for 30 to 60 seconds until fragrant but not browned.
- Stir in the hot paprika, ground cumin and garam masala and cook for 20 to 30 seconds to bloom the spices. Tip in the canned chopped tomatoes, add the remaining 1 tsp fine sea salt and the black pepper, then simmer for 6 to 8 minutes until slightly thickened.
- Add the prawns to the sauce and cook for 2 to 4 minutes, stirring, until they turn pink and are just cooked through. If the sauce looks too thick, loosen it with a splash of the reserved pasta water.
- Add the drained penne and toss well to coat. Take off the heat, stir through most of the fresh coriander, then squeeze over the lemon to taste. Serve straight away with the remaining coriander scattered on top.
Recipe notes
Tips
- Keep the garlic on a gentle heat and stir constantly so it perfumes the oil without browning, which can make the sauce taste bitter.
- If you are serving anyone who is pregnant, elderly, very young, or immunocompromised, make sure the prawns are cooked until fully opaque and piping hot throughout.
Substitutions
- Replace penne with rigatoni for a chunkier pasta that holds more sauce.
- Replace hot paprika with smoked paprika for a smokier, less sharp heat.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water until piping hot; avoid overcooking the prawns.
