Almejas a la Marinera (Clams in White Wine Sauce)
Why this recipe works
- Fast cooking: Clams steam open in minutes, making this a quick seafood dish with very little active cooking time.
- Simple, savoury depth: Softened onion, garlic, dry white wine and the natural clam juices create a balanced sauce without needing a long simmer.
- Lightly silky sauce: A small amount of flour gently thickens the wine and clam liquor, helping the sauce cling to the shells without becoming heavy.

Ingredient notes
- Choose live, fresh clams: Use clams with closed shells, or shells that close when tapped. Discard any that are cracked or remain open before cooking.
- Use a dry white wine: A crisp, dry wine keeps the sauce savoury and bright; avoid sweet wines, which can make the finish taste unbalanced.
Texture tips
- Stop once the clams open: Clams turn tough if left over the heat too long, so remove the pot from the heat as soon as most shells have opened.
- Adjust the sauce gently: If the sauce thickens too much, loosen it with a small splash of white wine and warm briefly without boiling hard.
Authenticity notes
- Spanish home-style seafood: Almejas a la marinera are commonly served as a simple seafood starter or tapa, with the sauce spooned over the clams at the table.
- Serve with bread: Crusty bread is the natural pairing, as the wine, garlic and clam juices form the most important part of the dish.

Ingredients
Instructions
- Rinse the clams well in cold water, scrubbing the shells, and discard any that are cracked or stay open when tapped. Finely chop the onion, thinly slice the garlic, and roughly chop the parsley.
- Warm the olive oil in a large pot over a medium heat. Add the onion with a pinch of the salt and cook for 5 to 6 minutes until soft but not coloured, then stir in the garlic for 30 seconds until fragrant.
- Sprinkle over the plain flour and cook, stirring, for 1 minute. Pour in the white wine and whisk or stir well to remove any lumps, then bring to a gentle simmer.
- Tip in the clams, cover with a lid, and steam for 4 to 6 minutes, shaking the pot once or twice, until the clams have just opened. Discard any clams that do not open.
- Stir most of the parsley into the sauce and taste, adding the remaining salt if needed. Spoon the sauce over the clams and finish with the remaining parsley, then serve straight away.
Recipe notes
Tips
- Do not overcook the clams: as soon as they open, they are ready and will turn tough if left longer.
- If the sauce looks too thick once the clams are cooked, loosen it with a small splash of white wine and warm gently for 30 seconds.
Substitutions
- Replace Yellow onion with Shallot for a sweeter, more delicate base.
- Replace Fresh parsley with Fresh coriander for a different herbal finish.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If you have leftovers, cool quickly and refrigerate; reheat gently in a covered pot over a low heat just until piping hot, and discard any clams that were not opened during the first cook.
