Jok (Thai Rice Porridge with Pork and Egg)
Why this recipe works
- Silky rice base: Long, gentle simmering breaks the jasmine rice down into a smooth porridge without needing cream or added starch.
- Clean savoury depth: Chicken stock, light soy sauce, white pepper and ginger build a rounded flavour while keeping the bowl light and balanced.
- Soft, soothing finish: Tender pork pieces and a soft-boiled egg add richness and substance to a warm, spoonable rice porridge.

Authenticity notes
- Home-style Thai serving: Jok is commonly served as a simple breakfast or light meal, with fresh ginger, spring onion and white pepper added at the end for lift.
- Cooked until the rice collapses: The defining texture comes from simmering the rice until the grains mostly dissolve, rather than serving it as separate, intact grains.
- Jasmine rice works well: Jasmine rice suits jok because it softens readily and gives the porridge a gentle aroma and naturally creamy body.
Texture tips
- For a smoother porridge: Whisk firmly as the rice cooks to help the grains break down and create a silkier consistency.
- If it thickens too much: Add a little hot stock or water gradually and keep simmering until the texture is loose but still spoonable.
- Keep the pork tender: Add the pork only once the rice base is ready, then simmer gently just until cooked through.
Timing notes
- Mostly simmering time: The active work is modest, but the rice needs regular stirring and whisking during the long simmer to develop the right texture.
- Best served straight away: Jok thickens as it stands, so serve it piping hot as soon as the pork is cooked and the toppings are added.
- Fresh egg is best: Cook the soft-boiled egg close to serving time for the best texture and safest handling.
Make-ahead tips
- Prepare the base ahead: The rice porridge can be cooked in advance, cooled quickly and refrigerated, then finished with freshly cooked pork and egg.
- Reheat gently: Warm the porridge in a saucepan with a splash of water or stock, stirring often until piping hot.
- Keep toppings separate: Store the porridge without the peeled egg, spring onion or ginger garnish so the toppings stay fresh.

Ingredients
Instructions
- Rinse the jasmine rice in cold water until the water runs mostly clear. Peel the ginger root, then finely grate half and cut the rest into fine matchsticks for serving. Thinly slice the spring onion and set aside.
- Bring the chicken stock to a gentle boil in a large pot. Stir in the rice and the grated ginger, then reduce to a low simmer. Cook for 55 to 60 minutes, stirring and whisking vigorously every 5 to 10 minutes, until the rice breaks down and the porridge is silky and thick.
- While the porridge simmers, put the minced pork in a mixing bowl and season with half the light soy sauce and the white pepper. Mix well, then shape into small bite-size pieces. Keep chilled if your kitchen is warm.
- Bring a saucepan of water to the boil and gently lower in the eggs. Boil for 6 minutes for a soft centre, then cool briefly under cold running water and peel. Set aside.
- When the jok is thick and the grains have mostly dissolved, keep it at a gentle simmer and drop in the pork pieces. Cook for 4 to 6 minutes, stirring gently, until the pork is cooked through with no pink remaining. Taste and stir in the remaining light soy sauce.
- Ladle the jok into bowls. Top each with a soft-boiled egg, then finish with the spring onion and the ginger matchsticks. Serve straight away while piping hot.
Recipe notes
Tips
- For the silkiest texture, whisk the porridge firmly as it cooks; this helps the rice break down into a smooth, thick consistency.
- If the jok becomes too thick before the rice has fully broken down, loosen it with a splash of hot chicken stock and keep simmering.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs to a firmer set (8 to 9 minutes) instead of soft-boiled.
Substitutions
- Replace chicken stock with vegetable broth for a lighter, non-meat base; keep the minced pork topping as written.
- Replace light soy sauce with dark soy sauce for a deeper colour and slightly sweeter flavour; start with half the amount and adjust to taste.
- Replace white pepper with black pepper for a sharper heat, using the same amount.
Storage
- Refrigerate up to 2 days
- Cool the jok quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water or chicken stock, stirring often, until piping hot; cook fresh eggs to serve rather than storing peeled soft-boiled eggs.
