Tinga de Pollo Tacos with Chipotle Sauce
Why this recipe works
- Smoky layered sauce: Chipotle, tomato, onion and garlic simmer together to create a savoury sauce with heat, sweetness and depth.
- Tender shredded chicken: Boneless chicken thighs stay juicy as they simmer, then shred easily into the thickened sauce.
- Bright finish: Lime juice, zest and fresh coriander cut through the smoky richness and keep the tacos lively.

Adjust the heat
- Make it milder: Start with less chipotle sauce in the pan, then let people add extra at the table if they want more heat.
- Add more smoke and heat: Increase the chipotle sauce gradually while the tomato base simmers, tasting before adding more.
- Keep the heat balanced: Use enough lime in the crème fraîche topping to sharpen the sauce and soften the smoky chilli intensity.
Texture tips
- Simmer gently: Keep the sauce at a gentle simmer rather than a hard boil so the chicken stays tender enough to shred.
- Reduce the sauce: Let the tomato mixture bubble uncovered briefly before returning the shredded chicken so the sauce coats rather than pools.
- Fill just before serving: Warm the tortillas and assemble the tacos at the last moment to keep them pliable without turning damp.
Make-ahead tips
- Cook the tinga ahead: The chicken filling can be made in advance and kept chilled, making it useful for quick tacos later in the week.
- Store the parts separately: Keep the tinga, tortillas, crème fraîche sauce, lime and herbs separate so the tortillas stay fresh.
- Reheat gently: Warm the tinga over a low heat with a splash of stock if needed, then heat the tortillas just before serving.
Authenticity notes
- Tinga-style cooking: Tinga is built around shredded meat simmered with tomato, onion and chipotle, giving it its recognisable smoky-savoury character.
- Tacos or tostadas: The same chicken filling is commonly served in tortillas or piled onto crisp tostadas with fresh toppings.

Instructions
- Halve and thinly slice the onion. Finely grate or crush the garlic, and cut 1 lime into wedges; zest and juice the other lime into a mixing bowl.
- Heat the sunflower oil in a large frying pan over a medium heat. Add the onion and cook for 8 to 10 minutes, stirring, until soft and lightly golden.
- Stir in the garlic and cook for 30 seconds until fragrant. Add the chipotle sauce and cook for 1 minute, stirring to coat the onions.
- Add the canned tomatoes and chicken stock, then nestle in the chicken thighs. Bring to a gentle simmer, cover, and cook for 15 minutes until the chicken is cooked through and tender.
- Transfer the chicken to a plate and shred with two forks. Simmer the sauce uncovered for 3 to 5 minutes until slightly thickened, then stir the chicken back in and cook for 2 minutes to coat.
- In the bowl with the lime zest and juice, mix the crème fraiche with 1 tbsp chipotle sauce taken from the pan, to make a quick chipotle sauce. Taste and adjust with a little more lime juice if you like it sharper.
- Warm the corn tortillas in a dry saucepan over a medium heat for 20 to 30 seconds per side, keeping them covered as you go. Fill with the chicken tinga, drizzle with the chipotle crème fraiche, and finish with coriander and lime wedges.
Recipe notes
Tips
- For a deeper flavour, let the tinga simmer uncovered for an extra 5 minutes at the end so the sauce clings to the chicken.
- If you are serving children or anyone sensitive to heat, start with less chipotle sauce in the tinga and add more at the table.
- Warm tortillas in batches and keep them covered so they stay pliable and do not crack when folded.
Substitutions
- Replace chicken thighs with chicken breast for a leaner filling; reduce the simmering time slightly and cook just until the chicken is tender.
- Replace crème fraiche with greek-yogurt for a lighter, tangier topping.
- Replace sunflower oil with olive-oil for a fruitier base note.
Storage
- Refrigerate up to 3 days
- Store the chicken tinga separately from the tortillas and toppings in an airtight container. Reheat the tinga in a saucepan over a low heat with a splash of chicken stock until piping hot; warm tortillas just before serving. Freeze the tinga only for up to 2 months, then defrost overnight in the fridge before reheating.
