Latin Chickpea and Spinach Bowl

A Latin-inspired grain bowl like this brings together the satisfying structure of rice, beans and fresh toppings in a format that works well for lunch or a light dinner. Brown rice gives the bowl a nutty, substantial base, while chickpeas are warmed through with onion, jalapeno, cumin and coriander until savoury and aromatic. Baby spinach folds in at the end for softness without losing its freshness. The tomato, lime and coriander salsa keeps the bowl bright and juicy, and ripe avocado adds a creamy finish. It is simple, colourful and easy to adjust for heat, making it a practical plant-based meal with plenty of texture in every forkful.

Why this recipe works

  • Warm, savoury base: Blooming cumin and coriander with softened onion and jalapeno gives the chickpeas depth before they are spooned over the rice.
  • Fresh acidity: Lime juice and tomato salsa cut through the richness of the avocado and keep the bowl lively.
  • Easy to prepare ahead: The rice and chickpea mixture keep well, while the salsa and avocado can be added fresh just before serving.

Adjust the heat

  • For less heat: Remove the jalapeno seeds and membranes, or use only part of the pepper for a gentler warmth.
  • For more heat: Leave some of the jalapeno seeds in, or swap in a sharper red chilli if you prefer a brighter chilli kick.
  • Keep the heat balanced: Finish with the tomato-lime salsa and avocado so the chilli feels fresh rather than harsh.

Make-ahead tips

  • Store toppings separately: Keep the salsa and avocado apart from the warm rice and chickpeas so they stay fresh and bright.
  • Reheat gently: Warm the rice and chickpea mixture in a frying pan with a splash of water until piping hot.
  • Good for lunches: Cook the rice and chickpeas ahead, then assemble with fresh salsa, avocado and coriander when ready to eat.

Ingredient notes

  • Choose ripe but firm avocado: A firm-ripe avocado slices neatly and adds creaminess without collapsing into the bowl.
  • Use a ripe tomato: A juicy, ripe tomato gives the salsa better sweetness and acidity, which is important in such a simple topping.
  • Let the spices bloom: Briefly cooking the cumin and coriander in the pan helps release their warm, savoury aroma before the chickpeas go in.

  1. Rinse the brown rice, then tip into a saucepan with the water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then simmer gently for 25 to 30 minutes until tender. Take off the heat and leave covered for 5 minutes, then fluff with a fork.
  2. Meanwhile, finely chop the yellow onion and jalapeno pepper (remove the seeds for less heat). Dice the tomato, finely chop most of the fresh coriander, and cut the avocado into slices. Juice the lime.
  3. Make the salsa by mixing the tomato with half the lime juice, most of the chopped coriander, and a pinch of the remaining salt and black pepper. Set aside so the flavours mingle while you cook the chickpeas. Keep the remaining coriander for finishing.
  4. Warm 1 tbsp of the extra virgin olive oil in a large frying pan over a medium heat. Add the onion and cook for 6 to 8 minutes until soft and lightly golden, then stir in the jalapeno pepper for 1 minute. Add the ground cumin and ground coriander and cook for 30 seconds until fragrant.
  5. Drain and rinse the canned chickpeas, then add them to the pan with the remaining 1 tbsp olive oil, the remaining lime juice, and the remaining salt and black pepper. Cook for 5 to 7 minutes, stirring, until hot and well coated in the spices. Add the baby spinach and cook for 1 to 2 minutes until just wilted.
  6. Divide the rice between two bowls. Spoon over the spiced chickpeas and spinach, then top with the tomato salsa and avocado. Finish with the reserved coriander and serve straight away.

Recipe notes

Tips

  • For a drier, more separate rice texture, rinse the brown rice well and let it steam off the heat, covered, before fluffing.
  • If you like a deeper flavour, let the chickpeas sit in the pan for a minute or two between stirs so they take on a little colour.
  • If serving to anyone who is sensitive to heat, remove the jalapeno seeds and membranes, or use only half the jalapeno.

Substitutions

  • Replace the jalapeno pepper with red chili pepper for a sharper heat.
  • Replace the extra virgin olive oil with avocado oil for a similarly clean, fruity base.
  • Replace the fresh coriander with fresh parsley for a milder, more herby finish.

Storage

  • Refrigerate up to 3 days
  • Keep the rice and chickpea mixture in an airtight container in the fridge for up to 3 days. Store the salsa and avocado separately and add fresh when serving; reheat the rice and chickpeas in a frying pan with a splash of water until piping hot.
