Modern Salmon Grain Bowl with Quinoa
Why this recipe works
- Balanced textures: Fluffy quinoa, tender roasted salmon, crisp cucumber and creamy avocado keep each bowl fresh rather than heavy.
- Bright, creamy dressing: Lemon, Greek yoghurt and Dijon cut through the richness of the salmon and avocado while adding a smooth finish.
- Good for lunch prep: The quinoa, salmon and dressing can be stored separately, then assembled with fresh avocado when ready to serve.

Timing notes
- Use the cooking overlap: The quinoa and salmon cook in a similar window, so prepare the cucumber, avocado and dressing while they finish.
- Let the quinoa stand: A short covered rest after cooking helps the quinoa finish steaming and makes it easier to fluff.
- Serve warm or room temperature: If serving at room temperature, let the quinoa lose some heat before adding avocado so it stays fresh-looking.
Ingredient notes
- Choose firm-ripe avocado: A ripe but firm avocado slices cleanly and holds its shape in the bowl.
- Rinse the quinoa: Rinsing helps remove any bitter coating before cooking, giving the finished grains a cleaner flavour.
- Adjust the lemon: Add a little more lemon juice to the dressing if you want a brighter finish against the salmon and avocado.
Make-ahead tips
- Keep components separate: Store the quinoa, salmon and dressing in separate airtight containers to preserve the best texture.
- Add avocado last: Slice the avocado just before serving to prevent browning and keep the bowl looking fresh.
- Reheat gently: Warm the quinoa and salmon in a 180°C (355°F) oven or use short microwave bursts, then serve with the chilled dressing.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Rinse the quinoa in a sieve, then tip into a saucepan with 300 ml water and 1/4 tsp of the salt. Bring to the boil, cover, and cook on a low heat for 12–15 minutes until the water is absorbed.
- Put the salmon on a baking tray and rub with 1 tbsp of the olive oil. Season with the remaining salt and the black pepper. Roast for 10–12 minutes, until just opaque and flaking easily.
- Fluff the quinoa with a fork, then cover and leave to stand for 5 minutes. Meanwhile, halve the cucumber lengthways and slice, then halve and stone the avocado and cut into slices. Keep everything ready for assembling.
- In a mixing bowl, stir together the Greek yogurt and Dijon mustard. Finely grate in a little lemon zest, then squeeze in the juice and whisk until smooth. Whisk in the remaining 1 tbsp olive oil and adjust with a little more lemon juice if you want it brighter.
- Divide the quinoa between two bowls and top with the cucumber and avocado. Flake the salmon into large pieces and add to each bowl. Spoon over the dressing and serve warm or at room temperature.
Recipe notes
Tips
- For the juiciest salmon, pull it from the oven as soon as the thickest part turns opaque and flakes with gentle pressure.
- If serving at room temperature, let the quinoa cool for 10 minutes before assembling so the avocado stays fresh-looking.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the salmon is cooked until piping hot throughout.
Substitutions
- Replace Greek yogurt with crème fraîche for a richer, less tangy dressing.
- Replace Dijon mustard with whole-grain mustard for a milder heat and more texture.
Storage
- Refrigerate up to 2 days
- Store the quinoa, salmon, and dressing separately in airtight containers. Add the avocado just before serving. Reheat quinoa and salmon in a 180°C (355°F) oven for 8–10 minutes until piping hot, or microwave in short bursts; serve with the chilled dressing.
