Turkish Chicken Bowl with Rice and Garlic Yoghurt Sauce
Why this recipe works
- Warm spice, fresh finish: Cumin and Aleppo pepper season the chicken, while lemon, parsley and sumac keep the bowl bright rather than heavy.
- Good contrast in every bite: Charred sliced chicken, soft rice, crisp cucumber and tomato, and cool yoghurt sauce create a balanced mix of textures.
- Easy to prepare ahead: The rice, chicken, salad and sauce can be stored separately, so the fresh elements stay crisp and the yoghurt stays cool.

Adjust the heat
- For less heat: Replace some or all of the Aleppo pepper with smoked paprika for gentle warmth and colour.
- For more heat: Add extra Aleppo pepper to the chicken seasoning, then keep the yoghurt sauce generous to balance the spice.
- Keep it balanced: Lemon juice, yoghurt and fresh salad help soften the chilli warmth, so taste the bowl as a whole before adding more spice.
Ingredient notes
- Aleppo pepper: Aleppo pepper brings mild chilli heat with a fruity, rounded flavour. Smoked paprika gives a softer, smokier alternative.
- Use thick yoghurt: Greek yoghurt gives the sauce body and cling; loosen it gradually if you prefer a thinner drizzle.
- Adjust the lemon: The salad and sauce both rely on lemon for brightness, so add it to taste rather than making the bowl sharply acidic.
Common mistakes
- Grill heat too low: A hot grill helps the chicken colour quickly. If the heat is too gentle, the chicken can cook through before it develops char.
- Not checking the chicken: Chicken thighs vary in thickness, so cook until the thickest piece is fully cooked through before resting and slicing.
- Assembling too early: Add the salad and yoghurt sauce just before serving so the rice stays fluffy and the cucumber keeps its crunch.
Make-ahead tips
- Store separately: Keep the rice, chicken, salad and yoghurt sauce in separate airtight containers for the best texture.
- Reheat only the warm parts: Warm the rice and chicken until piping hot, then add the salad and garlic yoghurt sauce cold.
- Good for lunch boxes: Pack the sauce in a small separate container and drizzle it over the bowl just before eating.

Ingredients
Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes to steam.
- Meanwhile, put the chicken thighs in a bowl and season with the ground cumin, Aleppo pepper, 1 tbsp of the extra virgin olive oil, and 0.5 tsp of the fine sea salt. Toss well so the chicken is evenly coated. Leave to sit while you make the sauce and salad.
- In a bowl, mix the Greek yogurt with 1 grated garlic clove, a squeeze of lemon juice, and a pinch of the fine sea salt. Loosen with a splash of water if you want it more drizzleable. Set aside in the fridge while you finish the rest.
- Dice the tomato and cucumber and put into a bowl. Add 2 tbsp of the extra virgin olive oil, the remaining lemon juice, 1 tsp of the sumac, and a pinch of the fine sea salt, then toss. Finely chop most of the fresh parsley and stir it through, reserving a little to finish.
- Heat a grill to medium-high and lightly oil the bars with a little of the remaining extra virgin olive oil. Grill the chicken for 5 to 7 minutes per side, until nicely charred and cooked through. Rest for 3 minutes, then slice.
- Fluff the rice with a fork and divide between two bowls. Top with the sliced chicken and spoon over the tomato and cucumber salad. Drizzle with the garlic yoghurt sauce, then finish with the remaining sumac and parsley.
Recipe notes
Tips
- For the juiciest chicken, avoid moving it for the first few minutes on the grill so it can colour properly, then turn once and cook until the thickest piece is no longer pink in the centre.
- If you are pregnant, elderly, or immunocompromised, use pasteurised Greek yogurt and make sure the chicken is cooked through before serving.
Substitutions
- Replace chicken thighs with chicken breast for a leaner bowl; grill for a slightly shorter time and rest well to keep it juicy.
- Replace Greek yogurt with whole-milk yogurt for a looser, lighter sauce.
- Replace Aleppo pepper with smoked paprika for a milder, smoky warmth.
Storage
- Refrigerate up to 3 days
- Store the rice, chicken, salad, and yoghurt sauce in separate airtight containers. Reheat the rice and chicken in the microwave until piping hot, and add the salad and sauce cold just before serving.
