Gluten-Free Pastel de Tres Leches with Almond Sponge
Why this recipe works
- Classic milk soak: The three-milk mixture gives tres leches its signature cold, creamy texture without needing a separate filling.
- Soft, saturated crumb: Poking the sponge and pouring the milk mixture slowly helps it absorb evenly while staying sliceable.
- Sweet but not heavy: Condensed milk brings richness, while whole milk and lightly whipped cream keep the finished cake from feeling dense.

Timing notes
- Allow enough chill time: The cake needs time in the fridge for the milk mixture to fully soak into the sponge and set into a clean, sliceable texture.
- Serve well chilled: Cut the cake straight from the fridge for the neatest squares and the most refreshing texture.
Texture tips
- Build air into the sponge: Whisk the eggs and sugar until thick and ribbon-like before folding in the almond flour; this gives the gluten-free sponge enough lift.
- Soak slowly: Pour the milk mixture gradually, pausing as needed, so the sponge absorbs it evenly rather than breaking apart.
Ingredient notes
- Use fine almond flour: A finely ground almond flour gives a softer crumb than coarse almond meal, which can make the sponge heavier.
- Keep the milk blend balanced: Evaporated milk, condensed milk and whole milk each contribute differently: depth, sweetness and fluidity for soaking.
Make-ahead tips
- Prepare in advance: The cake can be soaked and chilled ahead, then topped with whipped cream closer to serving for the cleanest finish.
- Do not reheat: Tres leches is intended to be served cold; warming it can loosen the cream and make the soaked sponge fragile.

Instructions
- Heat the oven to 170°C (340°F). Lightly grease a cake pan and set it on a baking tray for easy handling.
- In a mixing bowl, whisk the eggs with the caster sugar using a hand mixer for 6 to 8 minutes, until very pale, thick, and the mixture falls in ribbons. Beat in 1 tsp of the vanilla extract.
- In a separate bowl, whisk together the almond flour, baking powder, and fine sea salt. Fold the dry ingredients into the egg mixture in two additions, keeping as much air in the batter as possible.
- Scrape the batter into the prepared cake pan and level the top. Bake for 25 to 30 minutes, until golden and the centre springs back when lightly pressed.
- Cool the cake in the pan for 10 minutes, then turn out onto a cooling rack. Once just warm, return it to the cake pan.
- Whisk together the evaporated milk, sweetened condensed milk, whole milk, and the remaining 1 tsp vanilla extract. Use a skewer to poke the cake all over, then slowly pour over the milk mixture, pausing so it can soak in.
- Cover and chill for at least 2 hours, until the cake is fully soaked and cold. If there is any milk mixture pooled on top, gently spoon it over the surface to help it absorb.
- Whip the double cream to soft peaks. Spread it over the chilled cake, then chill for 15 minutes to set the topping before slicing and serving cold.
Recipe notes
Tips
- For the lightest sponge, whisk the eggs and sugar until the mixture is thick enough to leave a clear ribbon on the surface for a few seconds before it sinks back in.
- Pour the tres leches mixture slowly and evenly, especially around the edges, so the sponge absorbs it without breaking.
- If serving vulnerable groups, use pasteurised eggs where available.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Caster sugar with granulated sugar, whisking for an extra 1 to 2 minutes to help it dissolve.
Storage
- Refrigerate up to 3 days
- Store covered in the fridge and serve chilled. For the neatest slices, cut straight from the fridge with a clean knife, wiping between cuts.
