Tres Leches Cake (Milk-Soaked Sponge Cake)
Why this recipe works
- Classic three-milk soak: Evaporated milk, condensed milk and cream create the signature sweet, creamy soak that defines tres leches cake.
- Moist but light: Whipped egg whites keep the sponge airy, so it can absorb the milk mixture without turning dense.
- Better after chilling: Resting in the fridge gives the soak time to distribute through the cake and makes the finished slices cleaner.

Timing notes
- Allow time to chill: The cake needs at least a couple of hours in the fridge after soaking so the texture can settle properly.
- Serve cold: Tres leches is best served straight from the fridge, with any extra milk in the pan spooned over the slices if desired.
- Good the next day: The sponge continues to soften as it rests, making this a useful dessert to prepare ahead for gatherings.
Texture tips
- Keep the sponge airy: Fold the egg whites in gently and stop as soon as the batter is combined to preserve as much volume as possible.
- Soak evenly: Pour the milk mixture gradually, giving each addition time to sink in before adding more, especially near the edges.
- Chill before slicing: A well-chilled cake cuts more cleanly and holds its shape better on the plate.
Common mistakes
- Deflating the batter: Overworking the flour or folding too vigorously can knock out the air needed for a light sponge.
- Adding the soak too quickly: Pouring all the milk mixture over the cake at once can leave some areas saturated while others remain dry.
- Leaving it out too long: Because the cake contains dairy-rich soak and whipped cream, keep it covered and chilled between servings.
Ingredient notes
- Use the full three-milk combination: Each milk brings a different quality: evaporated milk adds body, condensed milk adds sweetness, and cream gives richness.
- Cinnamon finish: A light dusting of ground cinnamon adds warmth without overpowering the vanilla and dairy notes.
- Room-temperature eggs help: Eggs at room temperature whisk more easily and help create the stable volume needed for the sponge.

Instructions
- Heat the oven to 175°C (350°F). Lightly grease a cake pan (about 23 x 33 cm) and set aside.
- Separate the eggs into two large mixing bowls. Whisk the yolks with 150 g of the caster sugar until very pale and thick, then whisk in the vanilla extract and whole milk.
- In a separate bowl, whisk the egg whites with the fine sea salt to soft peaks. Gradually whisk in the remaining 30 g caster sugar and continue until glossy, firm peaks form.
- Sift the plain flour and baking powder over the yolk mixture and fold gently until just combined. Fold in one third of the egg whites to loosen, then fold in the rest in two additions, keeping as much air as possible.
- Scrape the batter into the prepared pan and level the top. Bake for 25 to 30 minutes, until golden and the centre springs back when lightly pressed.
- Cool the cake in the pan for 15 minutes. Using a skewer, poke holes all over the surface, going right down to the base.
- In a jug, whisk together the evaporated milk, sweetened condensed milk and 300 ml of the double cream until smooth. Slowly pour the mixture over the cake, letting it soak in between pours, then cover and chill for at least 2 hours.
- Whisk the remaining 300 ml double cream to soft, billowy peaks. Spread over the chilled cake, then dust evenly with the ground cinnamon.
- Slice and serve cold, spooning any extra milk from the pan over each portion if you like. Keep the cake chilled between servings.
Recipe notes
Tips
- For the lightest sponge, make sure the bowl and whisk for the egg whites are completely clean and free of grease.
- Pour the three-milk mixture on slowly so it absorbs evenly, especially around the edges and corners.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are produced to be eaten lightly cooked and ensure the cake is thoroughly baked.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Ground cinnamon with a smaller dusting of Ground cinnamon for a subtler finish.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge and serve cold. The sponge will continue to soften as it sits; for the neatest slices, chill well before cutting.
