Soufflé au Grand Marnier (French Orange Liqueur Soufflé)

A Grand Marnier soufflé is one of the most recognisable hot French desserts: served in individual ramekins, risen high from the oven and eaten before its delicate structure settles. The orange liqueur gives the sweet milk-and-egg base a clear citrus warmth, while vanilla and dried orange zest reinforce the aroma without making the pudding heavy. Its pleasure is in the texture — lightly golden on top, airy at the edges and softly set in the centre. Baked at 200°C (390°F), it is a dessert that rewards good timing more than elaborate decoration, best brought straight to the table while still puffed and fragrant.

Why this recipe works

  • Classic soufflé structure: A thick cooked base gives the whipped egg whites enough support to rise without turning heavy.
  • Citrus and vanilla depth: Grand Marnier, orange zest and vanilla create a clean, aromatic flavour that suits the light texture.
  • Tall, even rise: Buttered and sugared ramekins help the batter climb cleanly as it bakes.

Timing notes

  • Cool the base briefly: Let the cooked base cool until warm rather than hot before adding the yolks, so the eggs blend smoothly without scrambling.
  • Serve immediately: Soufflés begin to settle soon after leaving the oven, so bring them to the table straight away.

Texture tips

  • Whip the whites properly: Aim for glossy medium-stiff peaks: firm enough to hold shape, but still flexible enough to fold into the base.
  • Fold lightly: Loosen the base with a small portion of egg white first, then fold in the rest gently to preserve as much air as possible.

Common mistakes

  • Avoid opening the oven: A sudden drop in heat can make the soufflés collapse before the structure has set.
  • Keep equipment grease-free: Any fat in the bowl or whisk can stop the egg whites from whipping to their full volume.

Ingredient notes

  • Orange liqueur choice: Grand Marnier gives a rounded orange flavour; Cointreau can be used for a slightly drier citrus note.

  1. Heat the oven to 200°C (390°F). Generously butter four ramekins, then dust the insides with a little of the caster sugar, tipping out any excess. Put the ramekins on a baking tray.
  2. In a saucepan over medium heat, melt the unsalted butter. Stir in the plain flour and cook for 1 minute until it smells biscuity but has not coloured. Gradually whisk in the whole milk until smooth.
  3. Cook the mixture, whisking, for 2 to 3 minutes until thick and glossy. Take off the heat and whisk in the dried orange zest and vanilla extract. Leave to cool for 5 minutes so it is warm rather than hot.
  4. Separate the eggs, putting the whites into a clean mixing bowl and the yolks into a small bowl. Whisk the yolks into the warm base one at a time, then whisk in the Grand Marnier. The mixture should be smooth and thick.
  5. Whisk the egg whites to soft peaks, then add the remaining caster sugar a little at a time and whisk to glossy, medium-stiff peaks. Fold one third of the whites into the base to loosen it, then gently fold in the rest until no white streaks remain. Work quickly but lightly to keep as much air as possible.
  6. Divide the batter between the prepared ramekins, filling them almost to the top, and level gently. Bake for 12 to 14 minutes until well risen and lightly golden, with a slight wobble in the centre. Serve immediately, straight from the oven.

Recipe notes

Tips

  • Make sure the bowl and whisk for the egg whites are completely grease-free, as any fat will stop them whipping properly.
  • Do not open the oven door during baking, as the sudden drop in heat can cause the soufflés to collapse.
  • If serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised eggs and ensure the soufflés are baked until fully set in the centre.

Substitutions

  • Replace Grand Marnier with Cointreau for a slightly drier orange flavour.
  • Replace dried orange zest with dried lemon zest for a brighter citrus note.
  • Replace vanilla extract with madagascar-vanilla-paste for a more intense vanilla flavour.

Storage

  • Soufflés are best eaten straight away. If you must hold them briefly, keep in a warm place for up to 10 minutes, but expect some deflation; reheating is not recommended.
