Hummingbird Cake
Why this recipe works
- Soft, moist crumb: Very ripe banana, crushed pineapple and neutral oil keep the cake tender and rich without needing a complicated mixing method.
- Fruit and nut contrast: Toasted pecans add crunch and depth against the soft spiced crumb and smooth cream cheese icing.
- Balanced finish: Tangy cream cheese icing offsets the sweetness of the fruit and sugar, keeping each slice from feeling overly heavy.
- Easy to plan ahead: The uniced cake layers freeze well, so the baking can be done in advance and the icing added fresh.

Ingredient notes
- Use very ripe bananas: The bananas should be soft and heavily speckled for the best sweetness, moisture and flavour.
- Drain the pineapple well: Excess liquid can make the crumb dense, so drain crushed pineapple thoroughly before folding it into the batter.
- Choose full-fat cream cheese: Full-fat cream cheese gives the icing better structure and a smoother, thicker finish.
Timing notes
- Cool completely before icing: Even slightly warm layers can soften the cream cheese icing and make it slide.
- Chill for cleaner slices: A short chill after icing helps the layers firm up, making the cake easier to cut neatly.
- Serve slightly softened: If the cake has been refrigerated for longer, let it sit briefly at room temperature before serving for a softer crumb and creamier icing.
Common mistakes
- Overmixing the batter: Fold only until no dry flour remains; too much mixing can make the cake heavier and less tender.
- Adding wet pineapple: Undrained pineapple introduces too much moisture and can prevent the layers from baking up evenly.
- Icing too soon: Cream cheese icing needs fully cooled cake layers, otherwise it will loosen and lose its shape.
Make-ahead tips
- Bake the layers ahead: The cake layers can be baked in advance, cooled completely and kept well wrapped until ready to ice.
- Freeze uniced layers: Freeze the cooled cake layers without icing, then defrost at room temperature and finish with fresh cream cheese icing.
- Ice closer to serving: For the neatest finish, assemble and ice the cake after the layers are fully cooled and ready to serve.

Instructions
- Heat the oven to 175°C (345°F). Grease two cake tins and set aside.
- Spread the pecans on a tray and toast for 6 to 8 minutes until fragrant. Tip onto a plate to cool.
- In a large bowl, whisk together the flour, baking powder, bicarbonate of soda and cinnamon. Whisk in the light brown sugar, breaking up any lumps.
- In a second bowl, whisk the eggs with the sunflower oil and vanilla. Mash the bananas, then stir them into the egg mixture along with the crushed pineapple.
- Pour the wet mixture into the dry ingredients and fold just until no dry flour remains. Roughly chop the toasted pecans and fold them through.
- Divide the batter evenly between the tins and level the tops. Bake for 28 to 35 minutes, until the cakes are risen and a skewer comes out clean.
- Cool the cakes in the tins for 10 minutes, then turn out onto a rack to cool completely. If the cakes are even slightly warm, the icing will soften and slide.
- For the icing, beat the cream cheese until smooth, then sift in the icing sugar and beat until thick and spreadable. Sandwich the cakes with about a third of the icing, then spread the rest over the top and sides.
- Slice and serve straight away, or chill for 20 minutes for cleaner slices. Let the cake sit at room temperature for 10 minutes before serving if it has been chilled for longer.

Tips
- Drain the crushed pineapple well before mixing so the cake bakes up tender rather than heavy.
- For neat layers, weigh the batter into the tins so they bake evenly.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised eggs and ensure the cake is fully baked through.
Substitutions
- Replace Pecan nuts with Walnuts for a similar crunch and flavour.
- Replace Sunflower oil with Rapeseed oil for a similarly neutral cake crumb.
- Replace Ground cinnamon with Mixed spice for a warmer, more complex spice note.
Storage
- Refrigerate up to 4 days
- Store the iced cake in an airtight container in the fridge. For the best texture, let slices sit at room temperature for 10 to 15 minutes before serving. Freeze uniced cake layers well wrapped, then defrost at room temperature and ice fresh.
