Agua de Jamaica (Hibiscus Tea) with Lime
Why this recipe works
- Bright, balanced flavour: Hibiscus brings natural tartness, while sugar softens the edges and lime adds a clean citrus lift.
- Fast to prepare: The drink needs only a short steep before straining, sweetening, diluting, and chilling.
- Easy to make ahead: It keeps well in the fridge, making it useful for preparing before guests arrive or serving across several days.

Ingredient notes
- Use dried hibiscus flowers: Dried hibiscus gives the drink its deep colour and sharp, fruity flavour; avoid blends with added flavourings unless that is the taste you want.
- Adjust the lime at the end: Add the lime after dilution, then taste and sharpen it gradually so the citrus does not overpower the hibiscus.
- Sweeten while warm: Stirring the sugar into the warm infusion helps it dissolve evenly before the drink is chilled.
Timing notes
- Keep the steep short: A 10-minute steep draws out colour and flavour without pushing the hibiscus towards bitterness.
- Chill before serving: Serve the drink properly cold rather than relying only on ice, which can dilute the flavour quickly.
- Add ice at the last moment: Pour over ice just before serving so the drink stays bright and concentrated.
Make-ahead tips
- Make it in advance: Prepare the hibiscus drink ahead and keep it covered in the fridge until needed.
- Store chilled: Keep it refrigerated and stir before serving, as the flavour can settle slightly.
- Freshest when newly chilled: The flavour is brightest once fully cold, especially when served with fresh lime and ice.
Authenticity notes
- Mexican agua fresca style: Agua de Jamaica is commonly served as a chilled agua fresca: light, tart, sweetened, and poured over ice.
- Citrus can vary: Lime gives a sharper finish, while lemon creates a slightly softer citrus note.

Ingredients
Instructions
- Put 750 ml of the water into a saucepan and bring to the boil. Remove from the heat, stir in the dried hibiscus tea, and leave to steep for 10 minutes until deep ruby red.
- Set a sieve over a jug and strain the hibiscus, pressing gently to extract the liquid. While the infusion is still warm, stir in the caster sugar until fully dissolved.
- Stir in the remaining 750 ml water to dilute. Squeeze in the juice from the limes, then taste and adjust with a little more lime juice if you like it sharper.
- Chill in the fridge until cold. Serve over ice cubes in glasses.
Recipe notes
Tips
- For a cleaner flavour, do not steep the hibiscus for much longer than 10 minutes, as it can turn slightly bitter.
- If serving to pregnant people, young children, or anyone with a compromised immune system, make sure the drink is properly chilled and prepared with clean equipment.
Substitutions
- Replace caster sugar with agave syrup, stirring it in after straining so it dissolves smoothly.
- Replace lime with lemon for a slightly softer citrus finish.
Storage
- Refrigerate up to 4 days
- Store covered in the fridge and stir before serving, as the flavour can settle. Add ice cubes only when serving so the drink does not dilute.
