Kartoffelsuppe mit Speck (Potato Soup with Bacon)
Why this recipe works
- Layered savoury flavour: Cooking the leek and celery in bacon fat and butter gives the soup a deeper base before the potatoes are simmered.
- Naturally creamy body: Yukon Gold potatoes blend into a smooth, full texture, with double cream added at the end for extra silkiness.
- Crisp bacon finish: Some bacon is stirred through the soup while the rest is reserved for the top, adding smoky flavour and a crisp contrast.

Texture tips
- For a smoother soup: Let the potatoes become very tender before blending; they should break apart easily when pressed with a spoon.
- Keep the cream silky: After adding the double cream, warm the soup gently and avoid boiling so the texture stays smooth.
Ingredient notes
- Choose waxy-creamy potatoes: Yukon Gold potatoes work well because they soften easily and give the soup body without becoming gluey.
- Rinse the leek thoroughly: Leeks often hold grit between their layers, so trimming, slicing and rinsing well helps keep the finished soup clean-tasting.
Make-ahead tips
- Make ahead: The soup can be cooked and refrigerated for up to 3 days, then reheated gently before serving.
- Keep bacon crisp: If making the soup in advance, keep the reserved bacon separate and add it just before serving.
- Reheat gently: Warm over low heat, stirring often, and avoid boiling once the cream has been added.
Ingredient swaps
- Lighter cream option: Cooking cream can replace double cream for a lighter finish, but it should still be warmed gently to avoid splitting.
- Smoky bacon alternative: Smoked turkey can replace bacon if you want a similar smoky note with less fat.

Ingredients
Instructions
- Cut the bacon into small pieces. Fry in a frying pan over medium heat for 8 to 10 minutes, stirring, until deeply golden and crisp. Lift out with a slotted spoon, leaving the fat in the pan.
- Meanwhile, trim and rinse the leek well, then slice it. Slice the celery, and peel and cut the potatoes into roughly even chunks so they cook at the same rate.
- Add the butter to the bacon fat in the pan and let it melt. Add the leek and celery and cook for 6 to 8 minutes over medium-low heat until softened but not browned.
- Tip the softened vegetables into a large pot, add the potatoes and pour in the vegetable stock. Bring to a gentle simmer, then cook for 15 to 20 minutes until the potatoes are very tender when pierced with a knife.
- Take the pot off the heat and blend until completely smooth. Stir in the salt, pepper and double cream. Return to a low heat and warm gently for 3 to 5 minutes, stirring, without letting it boil.
- Stir most of the crisp bacon through the soup, reserving a little for the top. Ladle into bowls and finish with the reserved bacon and a final grind of black pepper if you like.

Tips
- For the smoothest texture, simmer the potatoes until they are starting to break down before blending, then blend for a full minute or two.
- Once the double cream is added, keep the heat low and avoid boiling to prevent the soup from splitting and to keep it silky.
- If serving vulnerable groups, make sure the soup is reheated until piping hot throughout.
Substitutions
- Replace Double cream with Cooking cream for a lighter finish, and warm gently as it can split if boiled.
- Replace Bacon with Smoked turkey for a similar smoky note with less fat.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, stirring often, and do not boil once the double cream is in the soup.
