Buddha Bowl (Roasted Veg and Grains)
Why this recipe works
- Good texture contrast: Tender sweet potato, browned broccoli, fluffy quinoa and lightly crisp chickpeas give the bowl more interest than a plain grain salad.
- Creamy, tangy dressing: Tahini brings richness, while lemon and garlic keep the dressing bright enough to balance the roasted vegetables.
- Practical for meal prep: The grains and roasted vegetables keep well, and the dressing can be stored separately so the bowl stays fresh.

Texture tips
- Dry the chickpeas well: Patting the chickpeas dry before roasting helps them brown rather than steam on the tray.
- Rest the quinoa: Leaving the quinoa covered after cooking lets the grains finish steaming, making them easier to fluff and separate.
- Loosen the tahini gradually: Add water a little at a time and keep whisking; tahini often thickens before it turns smooth and pourable.
Ingredient notes
- Use the broccoli stalk: Slicing the stalk makes the most of the vegetable and gives a tender, slightly sweet contrast to the florets.
- Cumin adds warmth: Ground cumin gives the roast vegetables a savoury, earthy base without making the bowl spicy.
- Adjust the lemon: Taste the dressing before serving and add a little more lemon if the bowl needs extra brightness.
Make-ahead tips
- Keep the dressing separate: Store the tahini dressing apart from the grains and vegetables so the bowl does not become heavy or damp.
- Good for packed lunches: The bowl can be eaten warm or at room temperature, making it practical for lunches away from the kitchen.
- Reheat before dressing: Warm the quinoa and vegetables until piping hot, then add the tahini dressing just before serving.
Serving ideas
- Add fresh herbs: Parsley, coriander or mint can add freshness against the roasted vegetables and creamy dressing.
- Add crunch: Toasted seeds or nuts work well if you want extra texture on top.
- Serve with a simple salad: A crisp cucumber or leafy salad keeps the meal fresh without competing with the tahini dressing.

Instructions
- Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm chunks; cut the broccoli into florets and slice the stalk. Drain and rinse the chickpeas, then pat dry.
- Tip the sweet potato, broccoli and chickpeas onto a baking tray. Add 2 tbsp of the extra virgin olive oil, the ground cumin, fine sea salt and black pepper, then toss well. Roast for 22 to 28 minutes, turning once, until the sweet potato is tender and the broccoli is browned at the edges.
- Meanwhile, rinse the quinoa in a sieve, then put it in a saucepan with the water and a pinch of the fine sea salt from the measured amount. Bring to the boil, cover and cook on a low heat for 12 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
- Make the dressing: in a bowl, whisk the tahini with the juice of the lemon, the remaining 1 tbsp extra virgin olive oil and the garlic (finely grated or crushed). Add 1 to 3 tbsp water from the tap, a little at a time, until it is pourable and creamy. Taste and adjust with a little more fine sea salt and black pepper if needed.
- Divide the quinoa between two bowls and top with the roasted vegetables and chickpeas. Spoon over the tahini lemon dressing. Serve warm or at room temperature.
Recipe notes
Tips
- Pat the chickpeas really dry before roasting so they brown and crisp more easily.
- If the tahini seizes when you add lemon juice, keep whisking and loosen with a splash of water until smooth.
- For best texture, keep the quinoa covered for the full resting time, then fluff to separate the grains.
Substitutions
- Replace Ground cumin with curry powder for a warmer, spicier roast seasoning.
- Replace Lemon with lime for a sharper, more aromatic dressing.
- Replace Broccoli with cauliflower for a similar roasting time and texture.
Storage
- Refrigerate up to 3 days
- Store the quinoa and roasted vegetables together in an airtight container, and keep the dressing separate. Reheat the bowl in the microwave until piping hot, then add the dressing, or eat at room temperature.
