Italian Roasted Vegetable Traybake
Why this recipe works
- Efficient roasting: The vegetables cook together on one tray, reducing cleanup while allowing their juices and olive oil to mingle.
- Simple layered flavour: Garlic, oregano and extra virgin olive oil give the vegetables a clear Mediterranean character without overpowering them.
- Useful beyond one meal: The roasted vegetables keep well and can be served hot, reheated, or used as a ready-made component for lunches and dinners.

Texture tips
- Give the vegetables space: Spread everything in a single layer so the vegetables roast and brown rather than steam.
- Add tomatoes later: Adding the cherry tomatoes near the end keeps them juicy and blistered instead of fully breaking down.
- Watch the aubergine: Aubergine absorbs oil readily; if it looks dry before roasting, add a little more olive oil so it softens properly.
Ingredient notes
- Choose firm vegetables: Firm aubergine and courgette hold their shape better during high-heat roasting.
- Dried or fresh oregano: Dried oregano works well during roasting; fresh oregano is best added after cooking to preserve its brighter aroma.
- Use ripe cherry tomatoes: Ripe tomatoes blister quickly and add sweetness and acidity to balance the roasted vegetables.
Make-ahead tips
- Good for meal prep: Cool completely, then refrigerate in a sealed container and use within four days.
- Reheat on a tray: For the best texture, reheat on a baking tray at 200°C (390°F) until piping hot.
- Freeze after roasting: The cooked vegetables can be frozen, though the texture is best when reheated from defrosted.
Serving ideas
- Serve as a side: Pair with grilled fish, roast chicken, beans or lentils for a simple Mediterranean-style meal.
- Use as a topping: Spoon over pasta, couscous, polenta or toast for an easy vegetable-led dish.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Cut the aubergine and courgettes into chunky bite-sized pieces, and cut the peppers and red onion into similar-sized chunks.
- Crush the garlic. In a large bowl, toss the aubergine, courgette, peppers and onion with the olive oil, salt, pepper and most of the oregano, reserving a pinch for serving.
- Tip the vegetables onto a large baking tray and spread into a single layer. Roast for 25 minutes, turning once halfway through, until the edges are taking on colour and the aubergine is softening.
- Add the cherry tomatoes to the tray and gently toss to coat in the oil and juices. Roast for 10 to 12 minutes more, until the tomatoes are blistered and the vegetables are tender and caramelised at the edges.
- Taste and adjust with a little more salt and pepper if needed. Serve hot, sprinkled with the reserved oregano.
Recipe notes
Tips
- For better browning, avoid overcrowding the tray; use two trays if needed and swap shelves halfway through roasting.
- If the aubergine is very spongy, give it an extra drizzle of olive oil so it roasts rather than dries out.
- This is naturally vegan and gluten-free; if serving to vulnerable groups, ensure the vegetables are cooked until piping hot throughout.
Substitutions
- Replace Red pepper with Yellow pepper for a sweeter finish.
- Replace Dried oregano with Fresh oregano for a brighter flavour; add it after roasting so it stays fragrant.
- Replace Extra virgin olive oil with Olive oil for a milder, less peppery taste.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 10 to 15 minutes until piping hot, or freeze for up to 2 months and reheat from defrosted for best texture.
