Slow-Cooked Kansas City BBQ Ribs
Why this recipe works
- Low, gentle cooking: Wrapping the ribs helps them cook in their own juices, giving a tender result without needing a smoker.
- Built-in barbecue depth: Smoked paprika, garlic and black pepper season the meat before the sweet, sharp sauce adds the classic Kansas City-style finish.
- Sticky, satisfying finish: A final uncovered bake sets the sauce into a glossy glaze that clings to the ribs.

Timing notes
- Mostly hands-off: The active work is brief; the main commitment is the slow oven time needed to tenderise the ribs.
- Rest before slicing: A short rest helps the juices settle and makes the ribs easier to slice cleanly between the bones.
- Best after glazing: Serve soon after the final bake, while the sauce is still shiny and sticky.
Texture tips
- Seal the foil tightly: A tight foil wrap traps steam and helps the ribs soften evenly during the slow bake.
- Glaze at the end: Adding the sauce late lets it caramelise without scorching during the long cook.
- Avoid overdoing the final bake: Once the glaze is sticky and lightly caramelised, remove the ribs so the meat stays moist.
Ingredient notes
- Choose meaty racks: Spare ribs with a good layer of meat and even thickness cook more consistently.
- Smoked paprika matters: It brings a barbecue-like smokiness to oven-cooked ribs without needing outdoor equipment.
- Balance the sauce: Apple cider vinegar cuts through the ketchup and brown sugar, keeping the glaze sweet but not flat.
Make-ahead tips
- Cook ahead, glaze later: Bake the ribs until tender, cool them, then glaze and finish just before serving for the best texture.
- Reheat gently: Reheat covered at 180°C (355°F) until piping hot, then uncover briefly to refresh the sticky glaze.
- Freezer-friendly: Cooked ribs can be frozen after cooling; thaw fully before reheating so they warm through evenly.

Ingredients
Instructions
- Heat the oven to 150°C (300°F). If needed, remove the thin membrane from the bone side of the ribs, then pat the ribs dry.
- Mix the fine sea salt, smoked paprika, ground garlic and black pepper. Season the ribs all over with the rub, pressing it in well.
- Place the ribs on a baking tray and wrap tightly with aluminium foil to seal. Bake for 2 hours 45 minutes, until very tender and the meat has pulled back from the bones.
- Meanwhile, make the sauce: combine the ketchup, light brown sugar, apple cider vinegar, mustard and Worcestershire sauce in a saucepan. Simmer gently for 8 to 10 minutes, stirring, until thick and glossy.
- Increase the oven to 220°C (430°F). Carefully unwrap the ribs and brush generously with the sauce, then return to the oven uncovered for 12 to 15 minutes until sticky and lightly caramelised.
- Rest the ribs for 10 minutes, then slice between the bones and serve. Brush on any remaining sauce just before serving.
Recipe notes
Tips
- For the best texture, keep the foil seal tight during the slow bake so the ribs braise in their own juices.
- If you want a deeper glaze, brush on a second thin layer of sauce halfway through the final high-heat bake.
- If serving vulnerable groups, make sure the ribs are cooked until piping hot throughout and the meat is fully tender with no pink near the bone.
Substitutions
- Replace mustard with dijon-mustard for a smoother, sharper sauce.
- Replace apple cider vinegar with white-wine-vinegar for a slightly softer tang.
- Replace smoked paprika with hot-paprika for a warmer, spicier rub.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat, covered, in a 180°C (355°F) oven for 20 to 25 minutes until piping hot, uncovering for the last 5 minutes to re-sticky the glaze.
