Chilli con Carne (Minced Beef and Kidney Bean Stew)
Why this recipe works
- Built-in depth: Softened onion, toasted spices, browned beef and caramelised tomato paste create a richer base before the liquid is added.
- Slow-simmered sauce: A gentle uncovered simmer reduces the tomatoes and stock into a thick, well-seasoned sauce that clings to the beef and beans.
- Good for batch cooking: The chilli keeps and freezes well, making it useful for planned leftovers or easy reheating later in the week.

Adjust the heat
- Make it milder: Use mild chilli powder or start with less hot chilli powder, then adjust once the sauce has simmered.
- Increase the heat: Add extra chilli powder near the end of cooking so the heat stays clear and direct without overwhelming the sauce.
- Keep the heat balanced: Serve with plenty of rice to soften the chilli’s intensity and make the stew feel rounder and more filling.
Timing notes
- Most of the time is hands-off: The active work is in chopping, browning and building the base; the flavour develops during the low simmer.
- Let it stand briefly: A short rest before serving helps the sauce settle and gives the chilli a thicker, more cohesive texture.
Make-ahead tips
- Even better after chilling: The spices and tomato base mellow together overnight, so leftovers often taste more rounded the next day.
- Freeze the chilli: Cool completely, freeze in sealed containers, then defrost in the fridge before reheating gently on the hob.
- Reheat without drying out: Warm over low heat with a splash of water or stock, stirring occasionally, until piping hot throughout.
Common mistakes
- Letting the base catch: Once the tomatoes and stock are in, keep the simmer gentle and stir occasionally, especially as the sauce thickens.
- Rushing the reduction: The uncovered simmer is what gives chilli its thick, spoonable texture; stopping too early can leave the sauce loose.
- Adding the beans too soon: Stir the kidney beans in near the end so they heat through without breaking down into the sauce.

Ingredients
Instructions
- Heat the olive oil in a large pot over medium heat. Finely chop the onion, add it with 1 tsp of the fine sea salt, and cook for 8 to 10 minutes until softened and lightly golden.
- Crush the garlic and stir it into the pot for 1 minute until fragrant. Add the ground cumin, hot chilli powder and dried oregano, and cook for 30 seconds, stirring constantly.
- Add the minced beef and black pepper, then turn the heat up to medium-high. Cook for 6 to 8 minutes, breaking it up with a wooden spoon, until browned with no pink remaining.
- Stir in the tomato paste and cook for 1 to 2 minutes to caramelise slightly. Pour in the canned chopped tomatoes and beef stock, scraping up any browned bits from the bottom.
- Bring to a gentle simmer, then reduce the heat to low and cook uncovered for 45 minutes, stirring occasionally, until thick and rich. If it starts to catch, add a splash of water and lower the heat.
- Meanwhile, rinse the long-grain white rice until the water runs mostly clear. Cook it in a saucepan of lightly salted boiling water for 10 to 12 minutes until tender, then drain well in a colander and cover to keep warm.
- Rinse and drain the red kidney beans, then stir them into the chilli. Simmer for 10 minutes until the beans are hot through, then taste and season with the remaining fine sea salt if needed.
- Serve the chilli over the rice. Let it stand for 5 minutes before serving if you want an even thicker texture.
Recipe notes
Tips
- For a deeper flavour, let the chilli simmer gently rather than boiling; it should bubble lazily at the surface.
- If you are cooking for anyone who is sensitive to heat, start with half the hot chilli powder and add more at the end.
- Cool leftovers quickly, then refrigerate; reheat in a saucepan over low heat with a splash of water or stock until piping hot throughout.
Substitutions
- Replace beef stock with chicken stock for a lighter, slightly sweeter base.
- Replace hot chili powder with mild chili powder for a gentler heat level.
Storage
- Refrigerate up to 3 days
- Cool the chilli completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently on the hob until piping hot.
