Amritsari Macchi (Spiced Fried Fish)

In Punjabi cooking, Amritsari macchi refers to bite-sized pieces of fish coated in a spiced gram-flour batter and fried until crisp. The dish is known for its lively seasoning: lemon, ginger and garlic give the fish brightness and depth, while cumin, coriander, turmeric and paprika bring warmth and colour. A little rice flour helps the crust turn light and crunchy, protecting the white fish so it stays flaky inside. Served hot with sliced onion and lemon wedges, it works as a snack, starter or part of a larger Indian-style meal.

Why this recipe works

  • Crisp coating: Chickpea flour gives the batter structure, while rice flour helps it fry into a lighter, crisper crust.
  • Bright, balanced flavour: Lemon juice cuts through the fried coating and lifts the ginger, garlic and warm spices.
  • Fast cooking: Small pieces of fish need only a short marinade and a few minutes in the pan, keeping the whole recipe practical for weeknights.

Authenticity notes

  • Punjabi style: Amritsari macchi is closely associated with Punjabi cooking, where spiced fried fish is typically served hot with sharp, fresh accompaniments.
  • Gram flour batter: Chickpea flour, often called besan, is central to the coating and gives the fish its distinctive savoury crust.

Adjust the heat

  • For less heat: Use a gentler paprika and keep the lemon and aromatics the same so the marinade still tastes lively.
  • For more heat: Add extra hot paprika or a little chilli powder to the spice mix, adjusting gradually so it does not overpower the fish.

Ingredient notes

  • Choose firm white fish: Cod, haddock or another firm, flaky white fish works well because it holds together during marinating and frying.
  • Avoid very delicate fillets: Thin, fragile fish can break apart when coated and turned in the pan, so choose pieces with enough thickness to handle easily.

Common mistakes

  • Batter too thin: The batter should cling to the fish; if it slides off immediately, thicken it slightly before frying.
  • Overfilling the pan: Fry in batches so the oil stays hot and the coating crisps rather than turning heavy.
  • Oil too hot or too cool: Keep the oil hot enough to sizzle around the fish, but not smoking, and adjust the heat between batches.

  1. Cut the white fish fillet into bite-size pieces. Finely grate the ginger root and crush the garlic. Zest 1 lemon and squeeze both lemons, reserving a few wedges for serving.
  2. In a mixing bowl, combine the lemon juice and zest with the ginger, garlic, ground cumin, ground coriander, hot paprika, ground turmeric and 1 tsp of the fine sea salt. Add the fish and turn to coat well. Leave to marinate for 10 minutes while you prepare the coating.
  3. In a second bowl, mix the chickpea flour, rice flour and the remaining 1 tsp fine sea salt. Add 90 ml water and whisk to a thick, clinging batter; it should coat the back of a spoon. If needed, add a splash more water a teaspoon at a time.
  4. Heat the vegetable oil in a large frying pan over medium-high heat until shimmering. Dip each piece of fish into the batter, letting the excess drip back into the bowl, then lay it into the hot oil. Fry in batches so the pan is not crowded.
  5. Cook the fish for 2 to 3 minutes per side, turning with tongs, until deep golden and crisp and the fish flakes easily. Transfer to a plate and repeat with the remaining pieces, adjusting the heat so the oil stays hot but not smoking. Rest for 2 minutes before serving so the crust sets.
  6. Thinly slice the red onion. Serve the fish hot with the sliced onion and reserved lemon wedges for squeezing over.

Recipe notes

Tips

  • For the best crust, keep the batter thick enough to cling; if it runs off the fish, whisk in a little more chickpea flour.
  • Let the oil come back up to temperature between batches so the fish fries crisp rather than absorbing oil.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the fish is cooked until piping hot throughout and flakes easily.

Substitutions

  • Replace White fish fillet with Cod fillet for a classic, flaky result.
  • Replace Hot paprika with Smoked paprika for a gentler heat and a smoky edge.
  • Replace Red onion with White onion if you prefer a sharper, more traditional bite.

Storage

  • Refrigerate up to 2 days
  • Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 8 to 10 minutes until piping hot and crisp; avoid microwaving as it softens the coating.
