Ají de Gallina (Creamy Chicken with Chilli)

Shredded chicken in a velvety ají amarillo sauce gives ají de gallina its unmistakable Peruvian character: gently spicy, creamy and savoury, with enough richness to feel generous without being heavy. The sauce is thickened with bread and walnuts, then rounded out with evaporated milk and Parmesan for a smooth, coating texture. Traditionally served with boiled potatoes and hard-boiled eggs, it works as a complete dinner with soft, mild accompaniments that temper the chilli. The key is a low, steady simmer so the sauce stays silky and clings to the chicken rather than splitting or catching.

Why this recipe works

  • Built-in depth: Softened onion, garlic and ají amarillo paste create a savoury base before the creamy sauce is added.
  • Velvety sauce: Bread, walnuts and evaporated milk blend into a thick, smooth sauce that clings well to the shredded chicken.
  • Classic structure: The chicken is poached, shredded and gently simmered in the sauce, then served with potatoes and hard-boiled eggs.

Adjust the heat

  • For a gentler sauce: Use less ají amarillo paste at first, then add more only if the sauce needs extra warmth.
  • For more heat: Cook in a little extra ají amarillo paste with the onion base, tasting before the final seasoning.

Authenticity notes

  • Home-style serving: Ají de gallina is commonly served as a creamy chicken sauce over boiled potatoes, finished with hard-boiled egg.
  • Ají amarillo character: Ají amarillo paste is central to the dish, bringing golden colour, fruity chilli flavour and moderate heat.
  • Traditional thickeners: Bread and nuts are often used to give the sauce body, helping it become rich without feeling heavy.

Ingredient notes

  • Chicken thighs: Boneless thighs stay tender after poaching and shredding, which suits the creamy sauce well.
  • Bread texture: Slightly stale white bread blends smoothly and thickens the sauce without making it overly soft or pasty.
  • Season at the end: Parmesan adds saltiness, so adjust the final seasoning only after the cheese has been stirred in.

Texture tips

  • Blend thoroughly: Blend the bread, walnuts, milk and cooking liquid until very smooth so the finished sauce has an even texture.
  • Keep the simmer gentle: Once the dairy and cheese are in the sauce, use low heat and stir often to keep it smooth.

  1. Put the potatoes in a large pot, cover with cold water, add 1 tsp of the fine sea salt, and bring to the boil. Simmer for 18 to 22 minutes until a knife slides in easily. Drain and keep warm.
  2. In a saucepan, cover the eggs with cold water and bring to the boil. Cook for 10 minutes, then cool under cold running water, peel, and set aside.
  3. In the same large pot, add the chicken thighs and cover with water. Bring to a gentle simmer and cook for 12 to 15 minutes until the chicken is cooked through. Lift out the chicken, reserving 300 ml of the cooking liquid, then shred the meat.
  4. Tear the white bread into pieces and put it in a blender with the walnuts, evaporated milk, and the reserved 300 ml cooking liquid. Blend until very smooth, scraping down as needed. Set aside.
  5. Finely chop the yellow onion and crush the garlic. Heat the vegetable oil in the saucepan over medium heat, then cook the onion with a pinch of the remaining salt for 8 to 10 minutes until soft and sweet. Stir in the garlic and cook for 1 minute until fragrant.
  6. Stir the aji amarillo paste into the onion mixture and cook for 2 minutes, stirring, to take the raw edge off. Pour in the blended bread mixture and bring to a gentle simmer. Cook for 8 to 10 minutes, stirring often, until thick and velvety.
  7. Add the shredded chicken and simmer gently for 3 to 5 minutes until the chicken is hot and the sauce coats it well. Stir in the Parmesan, then season with the remaining fine sea salt and the black pepper. Keep the heat low so the sauce stays smooth.
  8. Halve the eggs. Serve the ají de gallina over the warm potatoes, with egg on top.

Serving suggestions

This recipe pairs well with:

Boiled potatoes Hard-boiled eggs

Tips

  • Keep the sauce at a gentle simmer and stir often; if it boils hard it can catch on the base and turn grainy.
  • If you are serving anyone who should avoid undercooked eggs, make sure the eggs are hard-boiled as directed and cool them promptly before peeling.

Substitutions

  • Replace Parmesan with Pecorino Romano cheese for a saltier, sharper finish.
  • Replace white bread with brioche bread for a slightly richer, sweeter thickener.

Storage

  • Refrigerate up to 3 days
  • Cool the chicken and sauce quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, stirring often, until piping hot; add a splash of water if it has thickened. Store potatoes and eggs separately and add fresh when serving if possible.
