Imam Bayildi (Aubergine Braised with Tomato and Onion)

In imam bayildi, aubergines are treated as the centrepiece rather than a side vegetable: scored, softened in olive oil, then braised until their flesh turns silky and almost spoonable. The Turkish dish is known for its mellow onion and tomato filling, gently cooked until sweet, savoury and jammy, with garlic, black pepper and a little citrus to sharpen the richness. Served warm, chilled or at room temperature, it works well as a light dinner, part of a mezze-style spread, or alongside bread to catch the glossy braising juices.

Why this recipe works

  • Classic olive-oil braise: Frying the aubergines first, then baking them with a tomato and onion filling, gives the dish its characteristic soft texture and glossy finish.
  • Slow-built sweetness: Cooking the onions gently before adding the tomato creates a mellow, jammy base without needing many ingredients.
  • Bright finish: Lemon juice and parsley lift the richness of the olive oil and keep the finished dish fresh rather than heavy.

Authenticity notes

  • Zeytinyağlı style: This sits within the Turkish zeytinyağlı family of olive-oil vegetable dishes, often enjoyed cool or at room temperature.
  • Room-temperature serving: Cooling the aubergines in their juices is part of the appeal, allowing the filling, oil and braising liquid to settle together.
  • Simple finishing touches: A squeeze of lemon and fresh parsley are enough to sharpen the rich tomato-onion filling without overpowering it.

Timing notes

  • Salt before frying: The brief salting step helps draw surface moisture from the aubergines so they brown more readily in the pan.
  • Let it cool properly: The dish is at its best after cooling to room temperature, when the aubergines absorb some of the braising juices.
  • Serve safely: Because it is served at room temperature, avoid leaving it out for more than 2 hours, or 1 hour in hot weather.

Ingredient notes

  • Choose firm aubergines: Firm, glossy aubergines hold their shape better through frying and braising while still becoming tender inside.
  • Use ripe tomatoes: Ripe tomatoes give the filling its natural sweetness and acidity; underripe tomatoes can make the mixture taste flat.
  • Olive oil matters: Extra virgin olive oil is central to the flavour and texture here, so use one with a clean, rounded taste.

Make-ahead tips

  • Cook ahead: Imam bayildi keeps well in the fridge with its braising juices, making it a good make-ahead vegetable dish.
  • Bring back to room temperature: If serving cool rather than hot, take it out of the fridge in time for the chill to soften before eating.
  • Reheat gently: If serving warm, reheat in a 180°C (355°F) oven until piping hot, keeping some braising juices in the dish.

  1. Heat the oven to 180°C (355°F). Cut each aubergine in half lengthways and score the flesh in a deep criss-cross, taking care not to cut through the skin. Sprinkle the cut sides with 1 tsp of the fine sea salt and set aside for 15 minutes.
  2. Pat the aubergines dry, then heat 60 ml of the extra virgin olive oil in a large frying pan over medium heat. Fry the aubergines cut-side down for 5 to 7 minutes until lightly golden, then turn and cook for 2 minutes. Transfer to a baking dish, cut-side up.
  3. Add the remaining olive oil to the pan, then add the onions with the remaining 1 tsp fine sea salt. Cook over medium-low heat for 15 to 20 minutes, stirring often, until very soft and sweet. Stir in the garlic and cook for 1 minute until fragrant.
  4. Grate the tomatoes on the coarse side of a grater into a bowl, discarding the skins, then add the tomato pulp to the pan. Stir in the caster sugar and black pepper, then simmer gently for 10 to 12 minutes until thick and jammy. Taste and adjust with a little more fine sea salt if needed.
  5. Spoon the onion and tomato mixture generously over the aubergines, pressing some into the scores. Add 150 ml water to the baking dish around the aubergines to create a gentle braising liquid. Bake for 40 to 45 minutes until the aubergines are completely tender and the top is glossy.
  6. Let the dish cool to room temperature so the flavours settle and the olive oil is reabsorbed. Finely chop the fresh parsley and squeeze the lemon. Serve the aubergines with parsley scattered over and lemon juice to taste.

Recipe notes

Tips

  • For the best texture, cook the onions slowly until they are very soft; this is what gives imam bayildi its rich, mellow sweetness.
  • If serving at room temperature, leave the aubergines in their braising juices and spoon a little over each portion just before serving.
  • Food safety note: this dish is served at room temperature, so do not leave it out for more than 2 hours (or 1 hour in hot weather).

Substitutions

  • Replace Fresh parsley with Fresh mint for a more aromatic finish.
  • Replace Lemon with Lime for a slightly sharper citrus note.
  • Replace Caster sugar with Light brown sugar for a deeper sweetness.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container with the braising juices. Serve chilled or bring to room temperature; if reheating, warm in a 180°C (355°F) oven for 15 to 20 minutes until piping hot.
