Air Fryer Korean Bulgogi Beef
Why this recipe works
- Savoury-sweet marinade: Soy sauce, brown sugar, pear, garlic, ginger and sesame oil create the rounded umami sweetness associated with bulgogi.
- Fast cooking: Thinly sliced beef cooks in minutes, making the recipe well suited to a quick dinner once the marinade is mixed.
- Caramelised edges: A hot air fryer helps the marinade catch at the edges while keeping the beef tender when cooked in a single layer.

Ingredient notes
- Choose well-marbled beef: A tender, quick-cooking steak with visible marbling gives better flavour and stays juicier during the short air-fry.
- Slice across the grain: Briefly firming the beef in the freezer makes it easier to cut very thin slices, which cook evenly and feel more tender.
- Use a firm pear: A ripe but firm pear grates cleanly into the marinade and adds gentle sweetness without making the mixture watery.
Common mistakes
- Overfilling the basket: If the beef is piled up, it will steam rather than caramelise. Cook in batches so the slices sit in a single layer.
- Cooking too long: Thin beef can toughen quickly, so stop once the edges are caramelised and the meat is just cooked through.
- Skipping the short marinate: Even a brief marinate helps the beef absorb seasoning and lets the grated pear mixture coat the slices properly.
Make-ahead tips
- Marinate in advance: The beef can be marinated ahead and refrigerated if you need more flexibility; bring it back towards room temperature before air-frying.
- Reheat gently: Warm leftovers in the air fryer at 180°C (355°F) or in a frying pan with a small splash of water if the beef looks dry.
- Freeze without rice: Cooked bulgogi beef freezes better on its own than with rice. Defrost overnight in the fridge before reheating thoroughly.
Authenticity notes
- Air fryer adaptation: Traditional bulgogi is usually cooked quickly over high heat on a grill or pan; the air fryer offers a convenient way to mimic some edge caramelisation.
- Serve with rice: Short-grain rice is a natural match for the glossy, savoury-sweet beef and helps soak up the cooking juices.

Instructions
- Cook the short-grain rice in a saucepan according to the packet directions, then cover and keep warm. Meanwhile, place the beef in the freezer for 10 minutes so it is easier to slice thinly. Slice it across the grain as thinly as you can.
- Coarsely grate the pear into a mixing bowl, then finely grate in the garlic and ginger. Stir in the soy sauce, light brown sugar and toasted sesame oil until the sugar dissolves. Add the sliced beef and toss until well coated.
- Leave the beef to marinate for 10 minutes at room temperature. If you have more time, marinate for up to 30 minutes for deeper flavour. Stir once halfway through so the pear mixture stays evenly distributed.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Spread the beef in the basket in a single layer; cook in batches if needed to avoid steaming. Air-fry for 6 to 8 minutes, shaking once, until the edges caramelise and the beef is just cooked through.
- Thinly slice the spring onion. Serve the bulgogi beef over the rice, then scatter over the spring onion and sesame seeds. Spoon over any juices from the basket for extra flavour.
Recipe notes
Tips
- For best caramelisation, avoid overcrowding the air fryer basket and cook the beef in two batches if needed.
- If marinating longer than 30 minutes, cover and refrigerate; bring back towards room temperature for 10 minutes before air-frying for more even cooking.
Substitutions
- Replace light brown sugar with honey for a softer, rounder sweetness (the sauce will be slightly less sticky).
- Replace pear with apple for a similar tenderising effect and a slightly sharper fruit note.
Storage
- Refrigerate up to 3 days
- Cool the beef quickly, then refrigerate in a sealed container. Reheat in the air fryer at 180°C (355°F) for 3 to 5 minutes until piping hot, or in a frying pan over medium heat; add a splash of water if it looks dry. Freeze the cooked beef (without rice) for up to 2 months and defrost overnight in the fridge before reheating.
