Manakish Board (Za’atar Flatbreads with Feta, Cucumber and Olives)

Manakish brings the feel of a Levantine bakery flatbread to a generous sharing board: soft, lightly puffed dough baked hot and topped with fragrant za’atar oil or salty feta. Traditionally eaten warm and often torn by hand, these flatbreads are especially good with cool, crisp accompaniments, which is where the cucumber, ripe tomato and Kalamata olives work well. The result is savoury, herby and briny without feeling heavy, suited to relaxed grazing, a vegetarian dinner spread or a starter-style board where everyone can assemble bites to taste.

Why this recipe works

  • Classic flatbread method: A simple yeasted dough gives the manakish enough structure to puff quickly in a very hot oven.
  • Herby, savoury topping: Za’atar mixed with olive oil forms a loose paste that spreads easily and bakes into the surface of the bread.
  • Built for sharing: Serving the warm breads with feta, olives and fresh vegetables turns the flatbreads into a flexible board rather than a fixed plated meal.

Timing notes

  • Watch the dough, not just the clock: The rise may take more or less than an hour depending on room temperature; the dough should look noticeably doubled before shaping.
  • Best served warm: Manakish are at their best soon after baking, when the edges are still lightly crisp and the centres are soft.

Texture tips

  • Use a properly hot tray: Preheating the baking tray at 240°C (465°F) helps the flatbreads puff quickly and develop lightly blistered edges.
  • Keep the board components separate: Serve cucumber, tomato and olives alongside the breads rather than piling them on top, so the flatbreads stay warm and pliable.

Ingredient notes

  • Choose a good za’atar: Za’atar varies widely in salt, sesame and herb balance, so taste it before adding extra seasoning.
  • Use ripe tomatoes: Ripe tomatoes bring sweetness and acidity that balance the salty feta, olives and herb-rich flatbreads.

Make-ahead tips

  • Store bread and vegetables apart: Keep leftover manakish in an airtight container and store the cucumber, tomato and olives separately so the bread does not soften.
  • Reheat on a tray: Warm leftover manakish on a baking tray at 220°C (430°F) until hot, which helps restore the edges better than microwaving.
  • Freeze the baked flatbreads: The baked manakish can be wrapped and frozen, then reheated from frozen at 220°C (430°F) until heated through.

  1. In a mixing bowl, combine the flour, instant yeast, caster sugar and fine sea salt. Add the lukewarm water and 30 ml olive oil, then mix to a shaggy dough and knead for 8 to 10 minutes until smooth and elastic.
  2. Cover the bowl and leave the dough to rise at room temperature until doubled in size. This should take about 60 minutes, depending on how warm your kitchen is.
  3. Heat the oven to 240°C (465°F) and put a baking tray inside to get hot. Meanwhile, stir the za'atar with 60 ml olive oil to make a loose paste, and crumble the feta into a bowl.
  4. Tip the dough onto a lightly oiled surface and divide into 6 equal pieces. Roll each piece into a ball, then roll out into an oval about 3 to 4 mm thick.
  5. Working in batches, carefully slide 2 to 3 ovals onto the hot tray. Spread za'atar oil over some, and top others with feta, leaving a small border; bake for 6 to 8 minutes until puffed and lightly golden at the edges.
  6. Slice the cucumber and tomatoes, then arrange them on a large board with the olives. Add the warm manakish, drizzle the remaining 20 ml olive oil over the za'atar ones if you like, and serve straight away for tearing and sharing.

Recipe notes

Tips

  • For the best puff and blistering, make sure the baking tray is properly hot before the first batch goes in.
  • If serving a crowd, keep baked manakish warm on a tray in a 120°C (250°F) oven while you finish the remaining batches.
  • If you are pregnant, elderly, or immunocompromised, use feta cheese made from pasteurised milk.

Substitutions

  • Replace 100 g Plain flour with 100 g Whole wheat flour for a slightly nuttier, heartier flatbread.
  • Replace Feta cheese with Mozzarella for a milder, meltier cheese topping.
  • Replace Black Kalamata pitted olives with Green pitted olives for a brighter, less intense olive flavour.

Storage

  • Refrigerate up to 2 days
  • Store leftover manakish in an airtight container in the fridge. Reheat on a baking tray at 220°C (430°F) for 4 to 6 minutes until hot; keep cucumber, tomato and olives separate and serve cold. Manakish can be frozen, well wrapped, for up to 2 months and reheated from frozen at 220°C (430°F) for 8 to 10 minutes.
