Chopped Greek-American Salad with Pepperoncini
Why this recipe works
- Crisp, briny contrast: Romaine, cucumber and firm tomato provide crunch, while olives, feta and pepperoncini bring salty, tangy depth.
- Fast no-cook method: Everything is chopped, whisked and tossed, making it a practical salad for lunches or last-minute sides.
- Bright but balanced dressing: Red wine vinegar sharpens the vegetables, while extra-virgin olive oil rounds out the acidity.

Texture tips
- Keep the leaves dry: Dry the romaine well before chopping so the dressing coats the salad rather than diluting it.
- Use firm vegetables: Choose ripe but firm tomatoes and a crisp cucumber so the salad holds its chopped texture.
Make-ahead tips
- Store dressing separately: If preparing ahead, keep the chopped vegetables and dressing apart, then toss just before serving.
- Best eaten fresh: Once dressed, the salad is at its best straight away and should be eaten within 24 hours for the best crunch.
Ingredient notes
- Pepperoncini or banana peppers: Pickled banana peppers give a similar tangy bite to pepperoncini and work well when drained before chopping.
- Choose good feta: Use feta with a clean, salty flavour; pasteurised feta is the safer choice for pregnant, elderly or immunocompromised diners.
Serving ideas
- Serve with grilled mains: The sharp dressing and briny toppings pair well with grilled chicken, lamb, fish or halloumi.
- Make it more substantial: Add warm pita, cooked grains or extra cheese if serving it as a fuller lunch.

Instructions
- Trim the romaine and chop it into bite-sized pieces, then add to a large bowl. Dice the tomatoes and cucumber, and finely slice the red onion. Add them to the bowl.
- Roughly chop the pickled banana peppers and add them to the salad with the olives. Crumble in the feta cheese.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar and dried oregano until combined. Pour over the salad and toss well until everything is evenly coated. Taste and adjust with a little more vinegar if you like it sharper.

Tips
- For the cleanest chop, keep the romaine as dry as possible before cutting so the salad stays crisp.
- If you are pregnant, elderly, or immunocompromised, choose pasteurised feta cheese.
Substitutions
- Replace Red wine vinegar with White wine vinegar for a slightly softer acidity.
- Replace Dried oregano with Fresh oregano for a brighter herbal note.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If storing, keep the salad and dressing separate where possible; once dressed, refrigerate and eat within 24 hours for the best crunch.
