Chicken Mango Poke Bowl
Why this recipe works
- Bright, balanced dressing: Lime juice cuts through the sesame oil and soy sauce, keeping the chicken savoury but fresh.
- Layered textures: Soft sushi rice, tender chicken, creamy avocado, crisp cucumber and juicy mango make each bowl feel varied and satisfying.
- Easy to prep in parts: The rice, chicken and fresh toppings can be stored separately, then assembled when ready to eat.

Timing notes
- Let the rice rest: Keeping the rice covered off the heat helps it finish steaming and gives a better bowl texture.
- Best assembled just before eating: Add the avocado, mango and cucumber at the end so they stay fresh and distinct rather than softening into the rice.
Ingredient notes
- Choose firm-ripe mango: A mango that is ripe but still firm gives sweetness without collapsing when tossed and served.
- Use a ripe avocado: A soft, ripe avocado adds creaminess that balances the salty soy dressing and lean chicken.
Common mistakes
- Do not crowd the chicken: Cook the pieces in a single layer so they brown rather than steam.
- Avoid claggy rice: Rinse the sushi rice well and fluff it after resting so the grains stay light enough for a bowl.
Ingredient swaps
- Swap the mango: Pineapple works well in place of mango when you want the same juicy sweetness with a sharper edge.
- Swap the cucumber: Radish can replace cucumber for a crisper, pepperier bite.

Instructions
- Rinse the sushi rice in cold water until the water runs mostly clear, then drain. Tip into a saucepan, cover with fresh water and bring to the boil, then reduce to a low simmer, cover and cook for 12 minutes. Remove from the heat and leave, still covered, for 10 minutes.
- Meanwhile, pat the chicken dry and slice into bite-size pieces. In a mixing bowl, stir together the soy sauce, sesame oil and the juice of the lime. Thinly slice the spring onion and stir most of it into the dressing, reserving a little for serving.
- Heat a nonstick frying pan over a medium-high heat and add the chicken in a single layer. Cook for 6 to 8 minutes, turning, until golden and cooked through. Tip the chicken into the dressing and toss to coat.
- Peel the mango and avocado, then cut both into bite-size chunks. Halve the cucumber lengthways and slice. Fluff the rice, divide between bowls, then top with the dressed chicken, mango, avocado and cucumber.
- Spoon over any remaining dressing from the bowl. Finish with the reserved spring onion and the roasted sesame seeds, and serve straight away.

Tips
- For the neatest bowl, cool the rice for 5 minutes after resting, then fluff well so it stays light rather than claggy.
- If you are batch-cooking the chicken, spread it out to cool quickly before chilling.
Substitutions
- Replace Mango with Pineapple for a similar juicy sweetness.
- Replace Cucumber with Radish for a sharper crunch.
Storage
- Refrigerate up to 2 days
- Keep the rice, chicken and toppings in separate airtight containers. Eat cold, or reheat the rice and chicken separately in a microwave until piping hot, then assemble with the fresh mango, avocado and cucumber.
