Tuna Mango Poke Bowl

A poke bowl brings together seasoned rice, raw fish and fresh toppings in a format that is quick to assemble but still feels complete. This version leans bright and tropical, pairing sashimi-grade tuna with firm ripe mango, cucumber and avocado over warm sushi rice. Soy sauce, toasted sesame oil and lime give the fish a savoury, nutty and citrusy dressing, while spring onion and sesame seeds add sharpness and texture. Serve it straight away for the best contrast between cool toppings and warm rice, keeping the tuna well chilled until assembly.

Why this recipe works

  • Fast assembly: Only the rice is cooked, so the bowl comes together quickly once the tuna and toppings are prepared.
  • Clean, balanced dressing: Lime juice lifts the soy sauce and toasted sesame oil, keeping the tuna savoury without feeling heavy.
  • Fresh texture contrast: Soft rice, silky tuna, creamy avocado, crisp cucumber and juicy mango give the bowl a varied, satisfying bite.

Ingredient notes

  • Choose suitable tuna: Use sashimi-grade tuna from a trusted supplier and keep it chilled until you are ready to dice and dress it.
  • Use firm-ripe mango: Mango should be sweet but still firm enough to dice cleanly, so it adds freshness without turning soft in the bowl.
  • Cut with a sharp knife: Slice the tuna with long, clean strokes rather than sawing, which helps preserve its smooth texture.

Timing notes

  • Serve straight away: Assemble the bowls just before eating so the tuna stays chilled, the avocado looks fresh and the cucumber keeps its crunch.
  • Use the rice resting time: While the covered rice rests, dice the tuna and prepare the toppings to keep the total time efficient.

Make-ahead tips

  • Keep components separate: If preparing ahead, refrigerate the rice, toppings and dressed tuna in separate airtight containers and assemble within 24 hours.
  • Finish just before serving: Slice the avocado and add the sesame seeds and spring onion at the end for the best colour and texture.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with 225 ml water, bring to the boil, cover, then cook on the lowest heat for 10 minutes. Remove from the heat and leave, still covered, for 10 minutes.
  2. Dice the tuna into bite-size pieces and put into a mixing bowl. Whisk together the soy sauce, sesame oil and the juice of the lime, then toss with the tuna. Thinly slice the spring onion and stir most through the tuna, reserving a little for serving.
  3. Peel and dice the mango, slice the cucumber, and slice the avocado. Divide the warm rice between two bowls and top with the dressed tuna, mango, cucumber and avocado. Sprinkle with roasted sesame seeds and the reserved spring onion, then serve straight away.

Recipe notes

Tips

  • For clean slices, use a very sharp knife and cut the tuna in long strokes rather than sawing.
  • Use sashimi-grade Tuna steak and keep it chilled; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use cooked tuna instead.

Substitutions

  • Replace Tuna steak with Salmon fillet for a salmon poke bowl with the same dressing.
  • Replace Soy sauce with Light soy sauce for a slightly lighter, saltier flavour.

Storage

  • Refrigerate up to 1 days
  • Best assembled and eaten straight away. If needed, keep the cooked rice and prepared toppings (including dressed tuna) in separate airtight containers in the fridge and eat within 24 hours; do not leave raw fish at room temperature.
