Tandoori Chicken Salad Bowl
Why this recipe works
- Layered spice: Tandoori masala, cumin, smoked paprika, garlic and ginger give the chicken warmth and depth without needing a long marinade.
- Fresh crunch: Charred, juicy chicken sits over crisp romaine, cucumber and firm tomatoes, giving the bowl a satisfying hot-cold contrast.
- Bright finish: Lemon and yoghurt cut through the spices and grilled flavour, keeping the dressing light and tangy.

Adjust the heat
- For less heat: Use a milder tandoori masala blend and balance the marinade with extra plain yoghurt if needed.
- For more heat: Choose a hotter tandoori masala or add a little chilli powder to the marinade before coating the chicken.
- Keep the heat balanced: The lemony yoghurt dressing softens the spice, so adjust the seasoning after mixing rather than adding all the heat at once.
Timing notes
- Short marinade: The chicken can marinate while the salad is prepared, but up to 30 minutes gives the spices more time to settle into the yoghurt.
- Rest before slicing: Let the grilled chicken rest briefly before cutting so the juices stay in the meat rather than running into the salad.
- Best served warm: Assemble just before serving so the chicken stays warm and the lettuce remains crisp.
Make-ahead tips
- Store separately: Keep the chicken, salad leaves and dressing in separate airtight containers to prevent the lettuce from softening.
- Prep the salad base: The romaine, cucumber and tomatoes can be prepared ahead, then assembled once the chicken is cooked or reheated.
- Reheat gently: Warm the chicken in a 180°C (355°F) oven until piping hot, then add it to the cold salad and dressing.
Common mistakes
- Using raw marinade as dressing: If making a dressing from the yoghurt mixture, reserve it before adding the raw chicken; marinade that has touched raw chicken should not be served uncooked.
- Grill not hot enough: A properly heated grill helps the chicken char quickly; low heat can make it stick and cook unevenly.
- Dry chicken: Chicken thighs are forgiving, but breast cutlets cook faster; check earlier and remove them once the thickest part reaches at least 74°C (165°F).

Instructions
- In a mixing bowl, stir together the yogurt, tandoori masala, ground cumin, smoked paprika and 1 tsp of the fine sea salt. Finely grate the garlic and ginger root into the bowl, then squeeze in the juice from half the lemon and mix well. Before adding any chicken, reserve one quarter of the mixture in a separate clean bowl, cover and refrigerate for the dressing.
- Add the chicken thighs to the remaining mixture and turn to coat thoroughly. Cover and marinate in the fridge while you prep the salad, or for up to 30 minutes for deeper flavour.
- Trim the romaine lettuce and tear into bite-sized pieces. Slice the cucumber and cut the tomatoes into wedges, then divide between two bowls.
- Heat a grill to medium-high and brush the grates with the vegetable oil. Lift the chicken from the marinade, letting excess drip back into the bowl, then discard the used marinade. Grill for 5 to 7 minutes per side until lightly charred and the thickest part reaches at least 74°C (165°F) on a food thermometer, cooking longer if needed.
- Whisk the clean yoghurt mixture reserved before adding the chicken with the juice from the remaining lemon half and the remaining 0.5 tsp fine sea salt to make a lemony yoghurt dressing. If it seems very thick, loosen it with a splash of water from the tap.
- Rest the chicken for 3 minutes, then slice. Top the salad bowls with the chicken and spoon over the dressing to serve.
Recipe notes
Tips
- For the best char without drying out, let the grill get properly hot before the chicken goes on, and only turn it once per side.
- If you are cooking for someone vulnerable, use pasteurised yogurt; for everyone, check that the thickest part of the chicken reaches at least 74°C (165°F) with a food thermometer rather than judging by colour.
Substitutions
- Replace chicken thighs with chicken breast cutlets; check earlier and pull them off once the thickest part reaches at least 74°C (165°F) on a food thermometer to keep them juicy.
- Replace romaine lettuce with iceberg lettuce for extra crunch.
Storage
- Refrigerate up to 2 days
- Store the chicken, salad and dressing separately in airtight containers. Reheat the chicken in a 180°C (355°F) oven until piping hot, then assemble with the cold salad and dressing.
