Slow Cooker Beef Chilli

A good beef chilli is a slow-simmered, spoon-thick stew of minced beef, tomatoes, beans and warming spices, usually served in generous bowls with simple toppings or alongside rice, tortillas or jacket potatoes. This version uses the slow cooker to build depth without much hands-on time: browning the beef and onion first gives a savoury base, while cumin, hot chilli powder, smoked paprika and tomato purée bring heat, smoke and richness. Kidney beans are added near the end so they stay intact, leaving the chilli glossy, hearty and easy to portion for weeknight dinners or make-ahead meals.

Why this recipe works

  • Deep savoury base: Browning the beef and onion before slow cooking builds a richer flavour than adding everything raw.
  • Warm, smoky spice: Cumin, hot chilli powder and smoked paprika give the chilli heat, earthiness and a rounded smoky note.
  • Excellent for batch cooking: The sauce holds well in the fridge or freezer and reheats easily with a splash of water if it thickens.

Adjust the heat

  • Make it milder: Replace some or all of the hot chilli powder with smoked paprika for warmth without the same level of heat.
  • Add more heat: Increase the chilli powder gradually, tasting near the end once the sauce has reduced and the flavour is concentrated.
  • Keep the heat balanced: If the chilli tastes sharp or fiery, let it cook a little longer so the tomato, beef and spices settle together.

Timing notes

  • Most of the time is hands-off: The active work is mainly browning the beef and building the spice base before the slow cooker takes over.
  • Add the beans near the end: Stirring in the kidney beans for the final stage keeps them intact while still heating them through properly.

Make-ahead tips

  • Cook once, serve several ways: Portion leftovers for bowls, rice, wraps or baked potatoes across the week.
  • Freeze in portions: Cool completely, then freeze in sealed containers. Defrost overnight in the fridge before reheating.
  • Reheat gently: Warm on the hob until piping hot, adding a little water if the sauce has thickened too much.

Common mistakes

  • Do not rush the browning: Give the beef time to brown properly with the onion; this step adds much of the chilli’s savoury depth.
  • Watch the spices and tomato purée: Cook them briefly to deepen the flavour, but avoid letting them catch before transferring everything to the slow cooker.
  • Adjust the final thickness: If the chilli is looser than you like, remove the lid near the end so the sauce can reduce slightly.

  1. Peel and finely chop the onion. Peel and crush the garlic.
  2. Set a large frying pan over medium-high heat and cook the minced beef with the onion for 8 to 10 minutes, stirring and breaking it up, until the beef is browned and the onion has softened. Stir in the garlic for 1 minute until fragrant.
  3. Stir in the fine sea salt, black pepper, ground cumin, hot chili powder and smoked paprika for 30 seconds. Add the tomato purée and cook for 1 minute to deepen the flavour.
  4. Scrape everything into the slow cooker, then add the canned chopped tomatoes and beef stock. Stir well, cover and cook on low for 5 hours, until rich and thick.
  5. Drain and rinse the red kidney beans, then stir them into the chilli. Cover and cook on low for 45 minutes, until the beans are hot and the chilli is glossy and spoon-thick.

Tips

  • For a thicker chilli, remove the lid for the last 20 minutes of cooking so it can reduce slightly.
  • Taste at the end and adjust with a pinch more fine sea salt or black pepper if needed.
  • If serving vulnerable groups, make sure the chilli is piping hot all the way through before serving.

Substitutions

  • Replace hot chili powder with smoked paprika for a milder chilli.
  • Replace beef stock with water for a lighter, less savoury base.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container for up to 4 days. Freeze in portions for up to 3 months; defrost overnight in the fridge and reheat gently on the hob until piping hot, adding a splash of water if it has thickened too much.
