Kadhi Chawal (Yoghurt Curry with Rice)
Why this recipe works
- Smooth, creamy body: Chickpea flour thickens the yoghurt mixture into a silky curry without needing cream.
- Aromatic tempering: Cumin seeds and curry leaves bloomed in ghee add a fragrant finish that lifts the gentle tang of the kadhi.
- Classic rice pairing: Steamed basmati rice softens the acidity of the kadhi and turns it into a complete, satisfying meal.

Texture tips
- Keep the heat gentle: Once the yoghurt mixture is added, simmer gently and stir often; vigorous boiling can make the kadhi split.
- Whisk in stages: Mix the chickpea flour with a little water first, then add the yoghurt and remaining water gradually for a lump-free curry.
- Loosen as needed: Kadhi thickens as it stands, so add a splash of water and warm it gently if you prefer a lighter consistency.
Ingredient notes
- Use whole milk yoghurt: Whole milk yoghurt gives the kadhi better body and a rounder flavour than low-fat versions.
- Choose fresh curry leaves: Fresh curry leaves give the tempering its distinctive aroma; add them briefly so they turn glossy rather than scorched.
- Control the chilli: The green chilli brings gentle heat rather than sharp spice, but it can be reduced or replaced with a pinch of cayenne.
Make-ahead tips
- Store rice and kadhi apart: Keep the kadhi and rice in separate containers so the rice stays fluffy and does not absorb too much curry.
- Reheat without boiling: Warm the kadhi over low heat, stirring regularly and adding a little water if it has thickened.
- Good for planned lunches: The kadhi keeps well in the fridge for several days, making it practical for simple vegetarian meals.
Authenticity notes
- North Indian home-style dish: Kadhi chawal is typically served as a simple, comforting meal rather than a rich restaurant-style curry.
- Served with basmati rice: The traditional pairing with steamed rice is part of the dish’s identity, balancing the kadhi’s tangy, savoury character.

Instructions
- Rinse the basmati rice in a few changes of cold water until the water runs mostly clear. Put it in a large pot with the water and fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes, then fluff and keep warm.
- Meanwhile, finely slice the yellow onion. Peel the ginger root and grate it, then finely chop the green chili pepper.
- In a bowl, whisk the chickpea flour with a splash of the water until smooth, then whisk in the whole milk yogurt. Gradually whisk in the remaining water to make a thin, lump-free mixture.
- Heat the ghee in a saucepan over medium heat, then add the cumin seeds and let them sizzle for 20 to 30 seconds until fragrant. Stir in the onion and cook for 8 to 10 minutes until soft and lightly golden. Add the ginger, green chili pepper, fresh curry leaf and ground turmeric, and cook for 1 minute.
- Lower the heat and slowly pour in the yoghurt mixture, whisking as you go so it stays smooth. Bring it up to a gentle simmer, stirring often, then cook for 20 minutes until slightly thickened and gently tangy. Season with fine sea salt, then keep the heat low while you prepare the tempering.
- In a small saucepan, heat the ghee over medium heat and add the cumin seeds; let them crackle for 20 to 30 seconds. Add the fresh curry leaf and cook for 10 to 15 seconds until glossy and aromatic. Immediately pour this tempering over the kadhi and stir once or twice.
- Serve the kadhi hot with the steamed basmati rice. If the kadhi thickens as it stands, loosen it with a splash of water and warm gently without boiling.
Recipe notes
Tips
- Keep the kadhi at a gentle simmer and stir regularly; boiling can cause the yoghurt to split.
- For the smoothest texture, whisk the chickpea flour with a little water first, then add the yoghurt and finally the rest of the water.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised whole milk yogurt.
Substitutions
- Replace ghee with unsalted butter for a similar richness, though the aroma will be slightly different.
- Replace the green chili pepper with a pinch of cayenne pepper for heat without fresh chilli.
Storage
- Refrigerate up to 3 days
- Cool the kadhi quickly and refrigerate in a sealed container. Reheat gently in a saucepan over low heat, stirring often, and do not let it boil; add a splash of water to loosen if needed. Store rice separately and reheat with a tablespoon of water in a covered saucepan until piping hot.
