Goan Fish Curry with Rice
Why this recipe works
- Layered spice base: Cooking the onion, garlic, ginger and ground spices before blending builds a deeper, more rounded curry base.
- Bright, tangy balance: Tamarind, tomato and lime cut through the richness of the coconut milk, keeping the sauce lively rather than heavy.
- Smooth coconut gravy: Blending the spiced tomato mixture with coconut milk creates a silky sauce that coats the fish gently.

Adjust the heat
- For a milder curry: Reduce the chilli flakes and rely on the ginger, cumin and turmeric for warmth without sharp heat.
- For more heat: Add extra chilli flakes when frying the spices so the heat infuses into the oil and carries through the sauce.
Texture tips
- Keep the fish tender: Once the fish is added, keep the curry at a gentle simmer and cook only until the pieces are opaque and flake easily.
- Avoid a split sauce: Do not boil the coconut gravy hard after blending; steady, moderate heat helps it stay smooth.
Ingredient notes
- Choose firm white fish: Cod or another firm, skinless white fish works well because it holds its shape better in the simmering sauce.
- Adjust the sourness: Tamarind varies in intensity, so taste the sauce before serving and brighten it with lime only as needed.
Make-ahead tips
- Store curry and rice separately: Cool both quickly and refrigerate in separate airtight containers so the rice stays fluffy and the curry reheats more evenly.
- Reheat gently: Warm the curry over a low heat until piping hot, adding a little water if the sauce has thickened.

Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear. Put it in a saucepan with the water and 1 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes to finish steaming.
- Meanwhile, peel and roughly chop the onion, garlic and ginger. In a large pot, warm the vegetable oil over a medium heat, then add the onion with a pinch of the remaining salt and cook for 6 to 8 minutes until softened and lightly golden. Stir in the garlic, ginger, ground cumin, ground turmeric and chilli flakes for 1 minute until fragrant.
- Roughly chop the tomatoes and add them to the pot. Cook for 4 to 5 minutes, stirring, until the tomatoes break down and the mixture looks jammy. Take off the heat and let it cool for 2 minutes so it blends smoothly.
- Tip the spiced tomato mixture into a blender and add the coconut milk, tamarind paste and water. Blend until smooth, then pour back into the pot. Bring to a gentle simmer over a medium heat.
- Cut the white fish into large bite-sized pieces and slide them into the simmering sauce. Cook gently for 6 to 8 minutes, turning once, until the fish is opaque and flakes easily. Taste and season with the remaining salt, then squeeze in some lime juice to brighten.
- Finely chop the fresh coriander and stir most of it through the curry. Fluff the rice with a fork and serve alongside the curry. Finish with the remaining coriander and extra lime juice at the table.
Recipe notes
Tips
- Keep the curry at a gentle simmer once the fish goes in; a hard boil can break the fillets and make the sauce split.
- If you are serving vulnerable groups, make sure the fish is cooked until fully opaque and flakes easily all the way through.
Substitutions
- Replace White fish fillet with Cod fillet for a firmer, chunkier curry.
- Replace Chili flakes with Smoked hot paprika for a warmer, less sharp heat.
Storage
- Refrigerate up to 2 days
- Cool the curry and rice quickly, then refrigerate in separate airtight containers. Reheat the curry gently in a saucepan over a low heat until piping hot, adding a splash of water if needed; reheat the rice with a tablespoon of water, covered, until steaming hot.
