Vietnamese Ginger Fish Bowl with Jasmine Rice
Why this recipe works
- Bright, savoury balance: Fish sauce brings depth, lime adds sharpness, and a little sugar rounds the dressing without making it sweet.
- Fresh texture contrast: Soft jasmine rice and flaky fish are lifted by crisp cucumber, carrot ribbons and fresh herbs.
- Efficient cooking: The vegetables and dressing can be prepared while the rice cooks and rests, keeping the whole bowl streamlined.

Ingredient notes
- Choose firm white fish: Use skinless white fish fillets that hold together well in the pan and flake cleanly when cooked.
- Use fresh ginger: Firm, fresh ginger gives the bowl a clean aromatic heat; older, fibrous ginger can taste harsh.
- Adjust the dressing carefully: Fish sauce varies in saltiness, so drizzle the dressing to taste rather than adding it all at once.
Timing notes
- Let the rice rest: Keeping the rice covered off the heat allows the steam to finish cooking the grains evenly.
- Prep while the rice cooks: Slice the vegetables, cut the ginger and mix the dressing during the rice cooking time to keep the recipe efficient.
- Dress just before eating: Add the lime-fish sauce dressing at the end so the vegetables stay crisp and the rice does not become too wet.
Common mistakes
- Do not burn the ginger: Keep the heat moderate when cooking the ginger and spring onion whites; they should smell fragrant, not brown deeply.
- Avoid overcooking the fish: Cook the fish gently and stop once it is opaque and flakes with light pressure, which helps it stay moist.
Make-ahead tips
- Store components separately: For the best texture, keep the rice and fish apart from the raw vegetables and dressing if preparing ahead.
- Prepare the cold toppings early: The cucumber, carrot and dressing can be prepared in advance and kept chilled until serving.
- Reheat before assembling: Reheat the rice and fish until piping hot, then add the cold vegetables, herbs and dressing just before serving.

Instructions
- Rinse the jasmine rice in a colander under cold water until the water runs mostly clear. Tip into a saucepan with 300 ml water and bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, peel the ginger and cut into fine matchsticks. Thinly slice the spring onions, keeping the white and green parts separate. Cut the cucumber into thin half-moons, and peel the carrot into ribbons or fine matchsticks.
- Make the dressing: in a mixing bowl, whisk together the fish sauce, juice of the lime, caster sugar and 1 tbsp water until the sugar dissolves. Taste and adjust with a little more lime juice if you want it sharper. Set aside.
- Heat the sesame oil in a frying pan over medium heat. Add the ginger and the white parts of the spring onion and cook for 30 to 60 seconds until fragrant, keeping the heat moderate so it does not colour too much. Lay in the fish and cook gently for 2 to 3 minutes per side, or until opaque and it flakes easily.
- Fluff the rice and divide between two bowls. Top with the fish, then spoon over the warm ginger and spring onion from the pan. Add the cucumber and carrot, scatter over the green parts of the spring onion and the fresh coriander, then drizzle with the dressing to taste.
Recipe notes
Tips
- Keep the heat gentle when cooking the fish so it stays moist; it is ready when it turns opaque and flakes with light pressure.
- For extra fragrance, rub the coriander leaves lightly between your fingers just before serving.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the fish is cooked until piping hot throughout.
Substitutions
- Replace Jasmine rice with basmati rice for a slightly drier, more separate grain.
- Replace caster sugar with honey for a rounder sweetness in the dressing.
- Replace sesame oil with olive oil for a milder flavour, keeping the heat low so the ginger does not burn.
Storage
- Refrigerate up to 2 days
- Store rice and fish together in an airtight container, and keep the vegetables and dressing separate if possible. Reheat the rice and fish in the microwave until piping hot, then add the cold vegetables and dressing just before eating.
